When you buy them from the bulk bins at the health food store, how do you store at home? Are they supposed to be kept in the fridge?

Yes. I too buy bulk and keep a small amount in the fridge, the rest I freeze.

I store them in the fridge as well. I remember reading somewhere that if you don't store them in the fridge, mould can grow on them.

Buy bulk, fill one quart-sized canning jar for daily use, and vacuum seal the rest & freeze in quart size portions to refill canning jar when empty.

The vacuum sealer is my single most favorite kitchen gadget right now.... that may change when my Vita-Mix gets here next weeek.

I'd try eBay for one of them.
And yes, you will wonder how you ever made it through life without your Vita-Mix! I LOVE MINE! Use it daily!

Thanks!!! :) Where do you get the vacuum sealer?

I found one at a discount on eBay.... they can be purchased at most any store that sells kitchen appliances, though. The bags are a little costy, but I used to throw food out if it got bugs or stale, so I justify the cost since I am not throwing out food now!

I have been researching the Vita-mix lately. Do you really need one if you already have a good juicer and blender?

I dunno... I have a Champion juicer, and a fairly good blender, but the allure of the Vita-Mix finally got to me. The blender will now become my paper-making blender....

I had an Oster blender, which did fairly well, but one of the gals here was having a fundraising for her run raw team and I bought it through her to help her team out. I mean, they are running to spread the word of raw! How cool is that? If you can afford it, which I justified that I don't use my stove anymore, so....I'm saving the propane cost of that and, well, it did go to a good cause. Like I said, I absolutely love mine. Between making green smoothies and dips, I don't know how life existed pre VM!!! ;)
