I was just looking on the 'Purely Delicious' website and saw what look like ENCHILADAS! Could you tell me, is the recipe yours or someone else's? I've tried lots of your recipes and they're all so simple and DELICIOUS! (..So, I'm hoping it's yours!!)

Sorry, I'm just now reading this thread. I've been really busy lately and haven't been able to spend much time here. :(

Yes, they are enchiladas. The wrap is a variation of Alissa's and I just used a mixed vegetable base with lots of cilantro for the stuffing.

They are very good. I always enjoy making them too.
