i want to make alissa's carrot cake (book just came today) but i don't have cardamom. of these, are any acceptable replacements? i've never tasted cardamom.

sage
arrowroot
allspice
tumeric
cloves
oregano
basil
dill

Allspice and cloves are good replacements I would think. I've never had her cake before though

In all honesty, I don't really think you'd miss it...just maybe add a little more of the other spices involved in the recipe. Cardamom has it's own unique flavor, but the plant is related to ginger and I believe I read on this forum once that if you didn't have it you could use a little ginger - but don't quote me on that!

A tip...there have been previous discussions here about the carrot cake and some were kinda disappointed in the overall texture as it's kinda on the mushy side. So, a few of us came up with ways to make it more solid - adding more walnuts and even dehydrating came to mind...see this thread for more info:

I didn't have it either and it was really expensive at Wal-mart, so I just doubled the nutmeg and it turned out fine. I like the nutmeg flavor, so it didn't seem too strong or anything. Dehydrating helped a lot, too.

In my opinion, there's just nothing that tastes like cardamom.... so I guess I disagree with everyone :D

Try it without.. then with ... it's an amazingly exotic taste.
