I made mashed potatoes.. YUCK!
I've used it for rice .. that's ok.. but
WHAT ELSE can I do with a cauliflower?

How about making a dip and dipping it?
The last head of cauliflower that I had I lightly steamed it (brought the water to a boil, turned the burner off, put the cauliflower in the steamer thing, put the lid on and 10-20 minutes later it was warm and crisp), drizzled it with EVOO and a little ground sea salt ... yummmmmmmy :)

I do that with potatoes. I mix them with loads of raw veggies. I did this last night and it tasted great.
I've got some califlower and will try that.

I made cauliflower couscous and really enjoyed it. I got it from the rawvolution book....
basically you take a head of cauliflower and put it in the food processor.. grind it up till it's little tiny pieces.. (looks like couscous).
put it in a bowl.. add a little olive oil and lemon juice then any spices or anything else you want to suit your taste.
I put black olives, salt, pepper, basil, cilantro, and ground up almonds on top.
mix with a fork and enjoy! My fiance didn't like it, but I think it's pretty great.. if you can get past that cauliflower smell.

Hi, I am new and am really enjoying reading all the posts. I love, love, love cauliflower. Lately we have been cutting cauliflower into very small pieces, drizzling olive oil, celtic sea salt and lemon juice over it. I then use my microplaner and add about a teaspoon of fresh ginger, snip several tablespoons of cilantro, one tablespoon of hemp butter and chop 1/4 cup of pine nuts. This has a most unique taste. My whole family loves it and insists that we have a supply in the refrigerator at all times. :p This also works with cabbage ... just a tasty sauce that gets better each day ... if it lasts that long.

I just cut it up and eat it. I don't eat it very often because it's goitrogenic and I've had thyroid problems.

I've also cut it up to popcorn size and made a drizzle sauce out of almond butter and agave and put the "popcorn" on a teflex sheet and drizzled the sauce over it and dehydrated it until I liked it. That was pretty good.

There was a recipe on the board with "garam masala"....I loved that!! Maybe a search would bring up the recipe.....I'll look and if I find it I'll boot it up for ya'll!

I whipped up a quick variation of Alissa's swiss cheese recipe, and added that on top. I ran out of cashews, so had to add almonds, also added some fresh cilantro into this batch. Put a layer of the cauliflour, then the swiss cheese and then sliced up some green onions and sprinkled some cayenne on it, and sliced up an avocado on top of all of this. Put on the teflex sheet in my dehydrator for a few minutes. Once I sat down to eat it, I actually ended up mashing it all up together on my plate. And ended up adding more lemon juice. But it was really tasty. Oh...also put a little sea salt into the vitamix when I was making up the swiss cheese. I can't say my husband felt the same way (about the taste)...but he's trying to get used to all of this. I'd definitely make it again. And the lady at the health food store is right...the nutritional yeast can be really addictive. What a great flavor.

One of my favorite recipe with cauli is the tabouli from Raw Pleasure Australia's free ebook:

1 sm. Cauliflower
Big handful parsley
Bunch green onion
1-2 sprigs fresh mint
2-3 tomatoes, chopped
1 small avocado, chopped
1 tbs oil
Salt
Juice ½ - 1 lemon
Juice of ½ orange
Process cauliflower in FP. Set aside in bowl.
Process together parsley, onion and mint.
Add to cauliflower, along with remaining ingredients.
