I have 5 pounds of organic carrots taking up space in my tiny dorm sized fridge. I need to do something besides juice them!

I'd love to make a bread or cookie with them. Something dehydrated.
Any ideas?

Remember, I don't have space in my fridge for anything that needs to be kept refrigerated....

Alissa's: Carrot-pecan burgers or carrot cake (I make mine in layers and dehydrate them and them frost them as shown here:http://www.rawfoodtalk.com/forum/showthread.php?p=131606&highlight=carrot+cake#post131606

You could also make carrot-raisin slaw (I think there is a recipe also in Living on Live Food); carrot-cake cookies: http://www.rawfoodtalk.com/forum/showthread.php?p=4419&highlight=carrot+cake+cookies#post4419

Another carrot slaw:
grated carrots, fresh sqeezed lemons, walnuts, and soaked raisins. Yum and tasty too. Also got one of those tools to make raw pasta?
