take 1 zuccini. shred in saladacco/spirooli.
add a little olive oil, sea salt, and a few T of nutritional yeast.
Voila! Even my SAD dh loved it and tried to steal it from me at lunch! LOL!

ok, that just sounds too simple and easy to be good. I can't imagine that it could be like mac n cheese.
really? are you serious? man. I'm gonna have to try that.
and I've been craving mac and cheese real bad lately too.
I loooove it. my dc went dairy free a year ago and years earlier I had learned to make a mock cooked "cheese" sauce w/ nutritional yeast...so I put 2 and 2 together...and VOILA!

I made this today with "alfredo noodles". Made the noodles, added a dash of salt (to taste), olive oil, nutritional yeast to taste and popped it in the dehydrator for about an hour in a plastic ziploc bag. It tasted ok, but I decided to add some garlic (or garlic powder) and then I really liked it. Would make a great side dish. I could also see adding something like broccoli to it before warming it. A good base for adding on to.

do you buy it in bulk or does it come in a container? hmm.. I need some cheesy goodness!

You can buy nutritional yeast at a health food store. Ask anyone that works there they should know what you're talking about.

I don't know why, but the sound of that seems kind of freaky to me.... Like the bag heated at all would leach something onto the food....
maybe I am just being paranoid?

It comes in a container. Usually a round cardboard "can" with a plastic lid. Be sure to read the ingredients. There is one brand that contains whey so that one would not be Vegan. Red Star is a vegan brand. And if you have a Fred Meyer store where you live, they have their own brand (Naturally Preferred? I think...) in the health food section next to the brewer's yeast.

What exactly does nutritional yeast taste like? What is its purpose in this recipe? Does it taste the same without it? What makes this recipe a "Mac n cheese" rather then just spaghetti? :D
It sounds so good!!! Could I put this in a dehydrator? Is yes, how long?

Nutritional yeast gives the noodles a little bit of a "cheesy" flavor. Not necessarily a cheddar flavor, but a cheese like flavor. Just add it to taste and use some salt to bring out the flavor more. I did not find that it gave it a strong cheese flavor and that is why I added the garlic powder to it. I put it in the dehydrator in a plastic ziploc for about an hour and it came out fine. The "noodles" softened up a bit.
I have seen it in bulk in nearly every health food store I have been in. It is a yellow, powder looking product. Not sure if it is considered raw but I know that many use it the same way that they use seasonings, etc.
livingatthetop uses the same sort of recipe and puts it on cashews in a bag and shakes it up for "cheese doodles". I liked those also. A nice change of pace when you want that cheesy crunch.

Yes, it is. Unlike Brewer's yeast.

I guess I'm the odd man out here (not unusual) but I didn't care for this at all. Maybe I used too much nutritional yeast or something, but I didn't think it was remotely cheese-like, and I've been trying to get the taste out of my mouth all afternoon.
Oh, well, if everyone loved to eat the exact same thing, there'd be a heck of a fight at the grocery store, wouldn't there? :D

i think this was good. i used carrots instead of zuccini cause i didnt have any zuchini. and i added garlic and tomatoes and a avocado sauce. :D

I didn't care for it either. I went out to the grocery store just to get some zucchini and I couldn't wait to make it. I couldn't finish it. I tried tweaking it by adding some garlic etc. I didn't use all of my zucchini though, I had a feeling I may not like it.
