Hey guys,
today i bought the stuff to make the "best corn chips" - cynthia's recipe. Im going to be making them tomorrow and im so excited. i know a few ppl on here have tried them but ill let ya know how they turn out.
Does anyone have any tips of anything i should know for making these?

I was thinking of making these at Sandy's! Let me know how they turn out as I haven't made them yet either.

It must be a corn thing! I just put together a corn chip recipe that was terrific! I didn't go a very good job of writing it down though, so I made them again this morning and will know tomorrow if it worked well. It was kind of different - I dehydrated the corn first, then ground it in my coffee grinder. They were really nice qith some guac.
Let us know how yours turn out!

Wow, I did the same thing Anna! I have been experimenting with different corn-based recipes and using dehydrated/ground corn! It does turn out differently than fresh. I think we're on to something! :)

I agree! It turns out totally better. No chewy corn stuck in my teeth! What did you make?

well i didnt get them made today but i definately have to make them tomorrow. its imperative, as i have to do a test run before the party on sat. :) i cant wait to try them!

corn chips and dip are my favourite! is there seriously a yummy raw corn chip recipe? sounds like my kinda food! does anyone know what the recipe is called? i'll 'banana search' it!

There is no recipe for Cynthia's Corn Chips on there. I don't know where to find it.

Cynthia's Corn Chips
"Ok, the cracker recipe....without measurement as I am soooo tired..I will fine tune it later when I have more time
about 4-5 c gold flax meal, about 3 c organic corn, cilantro, onion, red bell pepper, jalapeno, a little zucchini- (for some reason this make it more crispy!) salt, olive oil, dash syrup or agave, cumin, and chili powder....Blend in FP until smooth adding water little by little...try to get very smooth. If needed you can add a little flax meal... if not smooth add more water. Should not be so thick and bumpy..
Oil your sheets well and then spread on a huge square. Get a bowl of water and wet hands many times over and over....smooth the mixture out as thin and smooth as you can get it...It will take practice and your hands have to be super wet.
The thinner they are the crispier they are... dehydrate about 15-24 hours on 105-115. Flip half way and when soft but pliable you can cut thin squares and then put back in dehydrator and lie 2 mesh sheets on top to keep chips flat as they ten to curl upward.
When super crisp--keep dehydrating till super crisp. When done put in airtight container so they wont get stale... I eat these with hummus, pico, and lots of shredded lettuce!

Eilene, sorry! There aren't exact measurements. Cassidy copied a post from the thread that I had posted and where you couldn't find the recipe. That's the whole shebang right there. :)

SUCCESS! The corn chips are sooo good! They have great flavour and a really nice crunch to them. they are gonna be fabulous with guac, sour cream, and salsa on saturday! Yipppeee!!!!!!
Im going to try another version tomorrow, using butternut squash instead of corn and see how that goes :D

May end up with "orange" chips if using butternut. Keep us posted. Yes, we love your pictures always. Wonder if you posted or I missed those chocolate crepes. I can still the picture in my mind--ALL THE TIME! Thanks.

Here they are...i seriously cant believe how yummy they are, since i hadnt made them before.
Instead of doing the version w butternut, i decided to make spicy butternut chips by slicing thin, mixing with olive oil, cayenne, sea salt. They're in the dehydrator right now! Along with chili chips and asian crunch sticks!

out of curiousity...
Do these get a "slimy" texture because of use of the flax? I can't stand anything dehydrated with flax because of the slimy texture i get in my mouth. anyone know? :confused: I appreciate it!

I've used a lot of flax in a lot of recipes and have never had anything turn out slimy... I wonder what the difference is between my flax and yours?

Yes- This is a great recipe. Many thanks to Cynthia for sharing. I think she is right that it is the zuchinni that adds the crunch.
I store mine in the freezer-all crackers/breads/chips...as it keeps them really fresh.

Question: If I dehydrate my corn and grind it, how much corn flour should I have....and about how many cup(s) of zucchini??? The recipe I have is pretty vague as to her measurements....fairygirl...your a genius....waiting for that ebook!

tville - i didnt dehydrate my corn and they turned out fabulous and crispy (no corn in the teeth). Altho i keep hearing how wonderful they are with the dehydrated stuff, and i want to try it.
i didnt use too much zucchini, maybe 1/2 cup, along with 3.5 cups corn and 4 cups flax meal, plus as many herbs and spices as are good for you. (taste it and see)

BlueKiss- Alissa has a recipe using frozen corn. But wait, I'm trying to remember if it's for crackers...... although I did make Alissa's recipe for corn chips with fresh corn, they were so tasty and pretty with the grated carrot in them.

I make a really good corn chip, but it's been awhile.
I DO have a great "Rawrito" (Dorito!!!) recipe I created....SOMEwhere around here. That's one for the book that I'd be willing to share if you want!

Raw avocado chutney in alissa's book has corn in it and it's to die for. I almost eat it everyday with raw crackers or on a salad. Soo yum!

I just made a huge batch of corn chips from the recipe on this thread (the one w/ equal parts corn and flax)- they are in the d, but i have a *feeling* they will not be very good bcuz the batter was very bitter tasting. Maybe it is bcuz all I had was frozen corn? Idk, but I'm just about to throw in the towel w/ corn chips because this is not the first batch to not go so well (lol).
But, before I do, Rawkinlocs I saw your post saying that you were working on a corn chip recipe w/ DRIED and GROUND corn flour. This sounds really intriguing to me. Do you, or anyone else have a recipe to share with this style of corn chip?
Any input on making a crip corn chip is very very much appreciated !!!!

I gave up on corn chips too. They always smell horrible as they dehydrate and they never seem to taste good or have a good texture.
