I have several ears of corn that need to be used right away. I was thinking that I should strip them down and dump them in my blender with...well, that is where you all come in because I dont know what to add to it. Ideally, I would like the taste of a warm corn chowder - a smidge salty but sweet from the corn with chunks of something resembling potatoes and whatever else might make it similar to corn chowder. HELP!!! This sounds so yummy in my imagination! :D
I have made some corn chowder that I think tastes pretty yummy.
1 cup almond milk
2 cups corn (one in blender, the rest add after)
1/2 clove garlic
1/2 t cumin
dash soy sauce or salt (to taste)
I put all of the above in my food processor or blender except 1 cup of corn... I add that whole to the corn chowder so it's chunky. If you have a high powered blender then you should be able to make the soup pretty warm just by blending it.
I've also made it with cashew nuts... it also comes out nice:
2 cups corn (one in blender, the rest add after)
1/2 - 1 cup water (depends on how thick you want it. I add the water last)
1/2 cup cashew nuts
add if you like....
1/2 t cumin
1/2 clove garlic
soy or salt to taste
some minced onion etc....

I love corn chowder. Throw in a tomato and it's cream of tomato soup. The sweetness from the corn makes it taste like campbells.

I've been wanting to make corn chowder too.
This is Alissa's:
Corn Chowder
2 1/2 cup almond milk
5 ears corn on the cob, shaved
1 small avocado
Sea salt to taste
Put aside one handful of corn. Blend everything else in a blender. Pour into a bowl, add the handful of corn and stir adding sea salt to taste.
I was going to make it for Christmas but I was put off by the amount of almond milk needed.
Another yummy thing to do with corn is RP's gravy.

The one I've made is closer to the cashew version. I think the cashews give it a super-creamy texture. I gently heat it on the stove with a thermometer so it's warm.
Try it with the tomato(es) blended in as well, it really tastes great.
