This is what I'm having for dinner tonight. I started with an assortment of greens, torn into large pieces. Then I added slices of tomato (small whole or chunks would have been better but my one lone tomato had some bad spots I had to trim off), chunks of green onion, strips of carrot, bell pepper, radish slices and walnuts. You can use whatever you like, but leave it in large enough pieces so you can just pick it up with your fingers to eat it. I don't eat dressing. I don't like it. So this is a perfectly portable meal. Since you eat it with your fingers, you can just eat it out of a bag. If you want dressing, you can use it as a dip.
If you have kids who turn their noses up at salads, this is a good way to get them to eat it. My daughter likes to eat hers this way too.
