I bought some beets but now I'm not sure what to make with them. Should I juice them with something, or are they better in a salad or what. I've never had raw beets before. Any great beet recipes anyone can recommend? :)

Ooh, beets are great in juice! just make sure to have enough other things in there with them: like apples, carrots, parsley, celery, ginger....its sooo yummy!

hi,

raw beet ravioli is good. also i like it shredded with some oil drizzled over and some chopped walnuts mixed in on a bed of greens

u can eat it alone or use it on salad. Beware: it can be messy. :D

Hi,
We, too, LOVE beet in our morning juice. Our usual combo is virtually identical to fairygirls' suggestion: apple, carrot, beet, celery, ginger and lemon. Ahhhhhh! Bliss! And it gives such a beautiful color!

The magenta salad recipe posted recently is also fabulous! Just do a banana search...

Thanks for all the great suggestions. I think I will first try the apple, carrot, beet, celery, ginger & lemon drink.
