Hi, has anyone here tried this recipe from Alissa's book? I'm completely addicted to sea salt and vinegar kettle chips and am wondering whether this recipe comes close to them? The book says to dehydrate 5-10 hours or until crisp, will they really get crispy?? What happens if I dont cut them very thin? Will they never get crispy?

Any chip, potato or veggie, should be sliced thin to be crisp. I have dehydrated fruits on my fathers machine years back and I remember it took an entire weekend for apples and such to be crispy. I think after 24 hours they are dried but still soft and flexible. I would leave them in for a long time and check them so they don't over kill lol!

I made these once and I sliced them on my mandolin - they came out too thin! They tend to dry up into nothingness if they are too thin. Next time I will use my food processor, which slices a bit thicker.
