Oh I am a big dork! I was so excited to try making a bread that I read through all the books I have and decided upon Alissa's spicey monkey bread. I LOOOOVE banna bread and have been so excited.

So I went to the store and got what I needed and have finished the sprouting process and just opened the recipe again only to learn that I was supposed to have bought wheatberries, but I accidentally bought and sprouted buckwheat!!

Eeek!

Do any of you experienced uncooks know if that would work as a sub? Or can anyone reccommend a really tasty, yummy recipe utilizing 3 cups of sproute buckwheat???

They don't always work interchangebly (sp?) because buckwheat does have a more distinctive flavor than wheat. BUT...you can try my suggestion if you want. I took Alissa's burger bun recipe, omitted the garlic and other herbs (still added the carrot, though) and I added a couple of bananas, some cinnamon and agave to taste and chopped walnuts (those are added after processing to keep them chunky). Spread on the teflex sheet about 1/4" thick and dehydrate for 3-4 hours until ready to flip...then, flip over onto the mesh tray and dehydrate until dry, but still pliable.

I have a photo here: http://public.fotki.com/Rawkinlocs/live_food_pictures/random_food_pics/banananutbreadcollage.html

TIP: Make only HALF the recipe to make sure you like it!

Thanks Rawkinloks. I was thinking about trying to make those burger buns sweet. Your pics look good. I think I'll give this a try! Thanks!!
