Hi all. I will be returning to work on Monday and I have just started the RAW challenge. So, my question this time is, besides salads, fruits, nuts, etc. what would be some good lunch items to take just to vary the palate? I have a dehydrator so I am good there. I am planning on only eating fruit in the a.m. but I don't want to only eat salad for lunch. I like spring rolls, so those are good, but what are some good lunch entrees that won't get soggy or spoil? Any ideas would be great. Thanks.

Flax crackers with different pates' & nut cheeses. Also you can do Raw burritos-rolled up in romaine/cabbage leaves.
Green smoothies in a thermos....
Veggies with dips...
Alissa's meatloaf as a sandwich..I used to bring this all the time to work. Just pack the veggies/toppings separate from the meatloaf & the bun/bread..
Just some ideas. I'm sure others will chime in..

This week I made Rawkinlocs Refried Beans and brought that in with flax crackers.
I've made the onion bread and made sandwiches with tomato, avo, lettuce, cucumber, etc.
I've made RAWvolutions tacos ... those are delicious.

Alissa's mini pizzas are easy to make and very rich. Since you have a dehydrator you'll all set to make those.

- "Pasta" with sauce of choice (may want to put in seperate containers or compartments until ready to eat)
- Collard wraps
- Honeybeejoy's Fajita (see recipe section)
- Alissa's chili w/onion dip and maybe some flax crackers on the side

My favorite is red or yellow or orange peppers, split in half, and stuffed with a layer of nut pate (basil and sundried tomato is my fav flavor) and then chopped carrots and maybe sprouts.. whatever else you want to put in there. It keeps well, nothing gets soggy and it is gooood...
I also like making one of the onion breads that you can find on this site and make up some guacamole and bring some tomatos. when you get to work make open faced sandwhiches of the bread, guac, and tomatoes.. Delish!

You could make any of the pates thinner to have as a dip, and bring along cut up veggies (carrots, cucs, zucchini, peppers, etc.) and maybe some flax crackers too.
Alissa's broccoli soup is soooo delicious, and very filling, so that could be another option. Oh, and the mock tuna salad recipe she has is delicious! Put that in its own container, and bring some onion bread, and yummmmmm!!!!!

Thanks so much. I made my first batch of flax crackers and they are delish. I will be trying some of these ideas. I just ordered the book and the DVD, so I will have to punt until I actually get to look at Alissa's recipes. I appreciate all of the feed back that I am getting from this site. :D :D :D

somedays I make fruit salads or big green salads
nutburgers
mini calzones
raw pizza
just about anything!
