Here I thought I was immune from all of these pics and sweets, but your chocolate cream stack has just toppled me. Would you mind sharing how you made it?

Alrighty girls, simple simple simple is all i can say.
Here it is-
The base is soaked pecans and dates
the cheesecake layer: cashews, raw honey, lemon juice, water, vanilla
the chocolate layer: soaked black raisins, bananas, dates, carob, bit of water
then i had a layer of chopped pecans
then a second thick layer of the chocolate.
then i just garnished with banana slices and carob sauce.

And so, they continued to be inspired by all her fantastic, mouth-watering, decadent creations for ever and ever...LOL

hehe aww thanks carmella and lana!!! - btw carmella, how was the shopping trip the other day?
lana - i used a tubular metal mold for it - all my fun chef's tools :D
so first i layered the crust, then the cheesecake layer...chilled those then topped with the rest and chilled that.

Did you measure your recipe? It looks like you use a mold? Its nice and professional looking. Did you set it in the fridge or freezer? I want to make this tomorrow, sorry for all the questions =)

Thanks Fairygirl! It was the top layer that got me. Looks like melted chocolate that hardened up on the there.

I could be totally wrong but I doubt she has exact measurements.... she seems like ...a little of this... pinch of that kinda gal. I would love exact measurements though... I STINK at ... a little of this and a pinch of that LOL

Fairygirl..I've been searching the net as I want to order some of those *tubular* metal molds. Is there a professional *Chefs* name for them? I know they can be really handy for desserts & presentation.

this one adjusts from 6-12" and is $18.

Fairygirl... I'm going to have to ask you to STOP posting pictures. Either that or you'll have to keep a pen and pad next to you to jot down measurements! It is absolute torture to keep logging on to see all of your new goodies and I'm so horrible at making things without measurements. Your mom is one fortunate woman to get to be your taste tester!!! Were/are you a SAD chef?

Fairygirl... one more thing. Is it better to use a cookie press or the baggie things? Any brands? I know some of the raw dough can be thick so I want to purchase the right things. THANKS!!

Hey guys,
Glad you found some molds...i got mine long ago at chef school.
Ama...yeah im a trained SAD chef...and no, ive never used a cookie press, but im sure you could experiment with it. I just use piping bags but im not sure of brands since mine are from school and working in a bakery a few years ago.

I ordered the canape molds. I was thinking I could make any type of bread/crackers/cookie-maybe freeze & then push & chop into the pretty shapes.
I ordered the entire pastry bag set as well as the Mousse rings. Wait til my DH sees all this coming in as I have another company shipping me tort pans...LOL...Actually..he is loving my experiments. :D
I am so anxious to get all these goodies as I am trying so hard for presentation besides taste.
