View Full Version : What can i make raw with potatos?

I have 1 SAD person in the home, i am looking for other variety dishes to make with potatoes (Russet, Sweet, Yam, etc....) vs. baked, fried, or boiled).
Recipes and suggestions will be greatly appriciated. :)

All I do with raw potatos is a dehydrator recipe. I slice them up with my spiral slicer (I tried doing them thin like chips but they're too hard to slice thin consistently) and soak them in lemon juice and water for a couple of hours. Then I drain them and add some olive oil, cumin and curry, sometimes minced onion and garlic, and spread it out on the dehydrator sheets and let it go overnight.
They're really great, almost like fried shoestring potatos. After awhile, I started slicing up carrots and zucchini and doing them all together. I tried some other veggies this way, but they weren't crunchy enough and just didn't work. The potato is the only one that comes out really "crunchy" this way but I didn't want to eat too many potatos by themselves so I added the carrots and zucchini. This will cure any "potato chip fever" someone might have. Beware, however! Now they will have "dehydrator crunchy potato" fever!

Thank you karen. In my introduction I mentioned that one of the worst things for me changing from vegan to raw food would be my loss of potatoes and here I find a solution :)
Now all I have to do is figure out how to do it without a dehydrator. I live in Africa and they have very few dehydrators and they cost the earth. More than a fridge and stove together would cost!
I am sure once I have read the whole forum I might find a solution for that.

Hey tropicalgeek! I wonder if using the Angel Hair part of the spiral slicer would work? Is that what you use or the disc part? Just curious... :confused:

Yes, I make angel hair potatos, carrot and zucchini! I should have said that, it's my dang brain fog. It's pretty severe when I do alot of reading. I'm really having fun looking at new recipes and raw food tips. Hopefully, going totally raw will cure it; I'm counting on it!

Cool! Thanks! I'm gonna try it!!! Oh, when you go 100% raw - your brain fog will definitely clear up! My mental clarity has increased tremendously.
Some times I get on MY nerves because I have so much energy! I have to tell myself when I go to work in the mornings and those poor SAD eaters are bumbling around until they get their cuppa joe, I have to tell myself not to be obnoxious and try not to get on their nerves - LOL!
Seriously, I hope my basket of fruit will inspire at least someone at work!
I have dreams of raw food creations, but don't seem to have enough hours in the day to accomplish all that I want.
With that said, I'm gonna get off of here and make those spirly, curley "fries"! WOO HOO!!!! :D

I made made some pretty rawsome potato chips. I used tropicalgeek's idea, however I used my disc slicer setting on my spiral slicer. You need to slice down the middle of the potato first so you don't end up with one long spiral.
I chose small potatoes that could fit into the spiral slicer. Then I scored it halfway (length-wise) down the middle. I left the skin on after I had really scrubbed the 'tater. Then I put the slices into a bowl with cold water and juice a lemon and swirled that around and let them soak for about two hours.
Drained them, dried them, then added a wee bit of EVOO and mixed up - hardly any. Then spread out onto a Teflex sheet and sprinkled just a smidgeon of Herbamare seasoning and let them dehydrate for overnight. I'll post a photo later this evening in the photo thread. They are pretty dern close to SAD chips, only waaaaay better!

Last night I dreamt I discovered a way to make raw potatoes taste like cooked potatoes. Then I woke up *cries*

I would make chips in the dehydrator but thats just my fat brain talking. It loves junk food :rolleyes:
