im wondering if anyone can help me.
I want to make alissa's enchilada's as part of my mexican dinner party but a friend of mine made them and said they were absolutely horrible. She said she took one bite and had to throw it all out.
the pic in the book looks so great tho and it sounds delish from the recipe. I guess i dont want to go to all the work and waste food if they're not going to be good.

has anyone on here made them?

I've made them and they're good...I'm wondering if your friend used fresh corn instead of frozen 'cause I did that once and the shells were horribly bitter! That was the only time I can remember not liking them and actually having to throw them out. But Alissa did say in the book that fresh corn has a funny taste when you use it in that recipe for some reason.

Other than that, they are very good...now they are not like the traditional enchiladas and maybe that is what your friend was expecting. But they are still very good with the veggie filling.

You can halve the recipe so there isn't as much waste if you find you don't like them...but you just can't always take other's word for it as we all have different tastesbuds...one person's "yuck" is another person's "yum"...and vice versa, I always say!

Also, I think RP says she just ups the amount of chili powder and cumin (I think those are the two seasonings used in the filling...don't have my book in front of me) and maybe you could try it as it is in the book with half the filling and try it with more spice in the other half or something. She (RP) also makes a sauce to go on top...you could make a sauce or a cheeze (I've done the cheeze and it was really good that way too).

So, as long as you use frozen organic corn instead of fresh off the ear corn, you won't have a problem with the shell being bitter and anything else, in the event you don't like it, IMHO can be salvaged with just some minor tweaking.

My friend who lent me his book to get me started said that he made them and really hated them. Couldn't eat them. I think that was the only thing in the whole book that he really really didn't like.

Ive made them and I love them!!! So does everyone else Ive made them for. They are delicious!!! I also suggest only using the frozen corn.

Second time with corn that I cut and then froze for a couple of days.

The taste was ptooey! I wasn't expecting them to taste like "regular tortillas", but I was expecting them to at least take like the corn I ate before it went into the dehydrator, only dried! I was very disappointed. Last Christmas (Christmas 2005) I built my entire raw menu around that. At least I got to enjoy bananas and blueberries :)

To use store-bought frozen corn wouldn't be a good idea because it's not raw. Is that what people do? Is that an exception to the "all raw" principles? Is conventional frozen corn not blanched before they bag it?

I guess it's like with anything else...some choose to eat raw cashews although they may not be "truly" raw...some raw recipes call for maple syrup though that's not raw...you pick and choose what you want to do. If fresh corn makes it bad but you're not willing to do frozen organic, then that enchilada recipe is off the list. But that's how I was taught to do it...with the frozen corn and they turn out great! The frozen (possibly blanched, haven't checked into the organic brands but pretty sure it is probably blanched) doesn't leave me with the "cooked food feeling" nor does it trigger cravings for other cooked food...just my own experience.

I freeze my own corn. I dont buy frozen corn either. I remember not liking my first tortilla but when I made it the second time I didnt try it until it was totally done and stuffed with the veggies. It was sooo good!! It would be one of my favorites if it were a little easier to make.

yeah my friend used the frozen corn like Alissa suggested...hmm, mixed reviews here.
Im gonna go look at the recipe again and see if i can change it.

I would suggest making perhaps a 1/2 batch following the recipe first, and see what YOU think of them. Then you can better decide how you'd want to change it.

I know I just polished off a batch earlier today. No, I didn't follow the recipe exactly... I never do on any recipe, just cuz that's me :-) But I do follow it when I teach Alissa's Level 2 class, and everyone seems to enjoy them (I'm guessing, cuz there's never any left ;) )

I love them!

I just don't compare them to the SAD version. I've learned not to try and duplicate the SAD foods, so I'm not disappointed.

I found this recipe to be superb, as has all I've shared it with. I use various sauces on mine, too.

One question... do you let the corn thaw first before mixing it? I haven't been and the shell is so chewy it sticks to your teeth.

I made them twice and loved them. I do add more seasoning to them (cilantro, cumin, etc) and add a little less flax than she suggested - but that's just my taste preference. I'm not a big fan of dehydrated flax recipes. But I did really like it - so much so, that it put "my" version in the calendar (with Alissa's permission and credits to her, of course). ;)

I think you should try it yourself and go from there. You have such a gift with recipe development, I know you could make it your own and to your liking very easily!

It is wonderful that Alissa has given us such a terrific book with so many recipes to choose from - and those that are great starting points to tweek for our individual tastes as well.

I've made the enchiladas several times and they were delicious! I even made it for a raw class I was teaching and everybody loved them. It was all gone by the end of the night! But do be careful not to over dehydrate the wrap. It will be a little on the hard side if you do. I've done it before. :) Nonetheless, the enchilada was still delicious!

I vote for - Love them! and i like so few of the cook-a-likes. Really, it is the only entree so far that I can tolerate. (anyone have any help for me out there???)

elian-I have to thaw the corn first, otherwise it doesn't blend. It sticks to my teeth too, but not every time. What's up with that?
