I don't know what the etiquette is for posting recipes but here you go.. it's from the rawvolution book .... I know how hard it is to give up cheese! I'm quite the cheese lover myself.. let me know how they turn out for you.. I kinda played with the recipe a bit myself and the cheese was a little too tart because I put too much lemon juice.
if posting this recipe is in bad form, I sincerely apologize.
4 3/4 cups raw sunflower sees
1/2 cup fresh lemon juice
1/2 cup nama shoyu
4 cloves garlic, peeled
grind 2 3/4 cups of sunflower seeds in food processor.
spread 2 cups of ground sunflower seeds on a large plate.
in blender, combine the lemon juice, nama shoyu, garlic, and the remaining sunflower seeds... blend until smooth. transfer the mixture into a pastry bag (I used a ziplock bag!) and squeeze dough onto the plate of ground sunflowers making sticks that are approximately 3 3/4 inches long. Roll the sticks until completely covered with ground sunflower seeds.
carefully transfer sticks into the dehydrator for 18 to 24 hours at 100 degrees.
enjoy!

I'm going to try this cheese recipe! Thank you for posting it. I wonder if it would be okay to use Braggs Aminos instead of Nama Shoyu?
Many recipes say that the 2 can be inter-changed but say that braggs isn't great for ya...
my avocados aren't ripe yet... Bethanie... have you tried it yet? How'd it come out.
I use braggs instead all the time.. .forgot to mention that!
