I've tried making Alissa's calzone recipe today ... I'm not too happy with how it's turned out. I'd actually call it a "calzone sandwich". :( The dough stayed thick, so it's more like bread, and won't close. I made three small ones, and they really look like sandwiches. Hopefully they'll at least taste good. :(
Anyone else ever have this happen?

Hi Carolyn,
When you put the fillings on the one half and topped with the other half of the crust, did you pinch the sides together and seal it like the recipe said? It's kinda "tricky" until you actually see someone do it. Taking the class helped me to really understand how to make it...sometimes a visual is needed with certain recipes. But you have to like, pinch the sides of the top and bottom crusts together even if this means kind pinching off the edges and then the wet insides of the dough, you kinda spread around the edge to seal it all in.
But hopefully you'll love the taste! I love the calzone...it's one of my favorite recipes from LOLF. Just be sure to let it get all the way done and if you find your timeline needs to go over what is in the book, so be it or you can turn up the temp...in fact, I advise for the first couple of hours that you DO turn it up a little higher than normal as the food itself won't get that hot in the first couple of hours. Then, turn it down to more "normal raw" temps. until it's done.

I've tried to seal it the best I could, but it's not perfect. The dough started trying to break (across the top). This definitely isn't pretty!!! Hopefully it'll at least taste good. I wish there were a video of how to do this one out there somewhere. It would definitely come in handy!!
I've gone ahead and upped the temp for now and will turn it down in a few hours. Thanks for the tip!!
I just really hope this turns out halfway decent. I was really looking forward to it, and I'd hate to have to trash it. What a waste that would be. :(

Hi Sharon,
Saw that one ... and the amazing pics! That's one reason I'd wanted to try it. But if this doesn't work, than I'll hopefully have a bit of an idea of what not to do next time! :)

my goodness sharon, your calzone looks awesome, i bet it tasted even better!!
Sometimes when I rushed for time I just make it like a sandwich and dont pinch the edges together. It still always tastes delicious!! I usually dont make my crust too thick because its very filling for me. I also use her calzone crust recipe for thin and crispy pizza crust.
