Gooey Pizza Cheese...

Okay heres my fun lil deal... Im making RP's Cheese Pizza Recp today for my New years Celeb. Her cheese recipe calls for 1/2 cup of coconut meat. That's the only thing I dont have, I cant get to the store today that carries them. I do have 1 coconut left, but I know there aint 1/2 cup of meat in there. So anyone ever replace the coconut meat with anything else? or should I just use a diff cheese recipe? I was thinking maybe soaked raw shredded coconut soaked for awhile then added in? Or em I off? LOL, Anyone?

I emailed the lovely RP, but Im going to be heading off to the closest store that doesn't sell coco's shortly, so just wondering if anyone had some ideas if I dont get the responce in time?

Will look up gooey cheese in the search as well.

are you sure your coconut doesn't give you 1/2 cup of meat?

In your situation, I would scrape the coconut clean of all the meat inside, measure the amount of meat and then adjust the other ingredients accordingly. For example, half the recipe ;)

Can you make raw nut cheese? Maybe it would taste fine?
