I am so excited that I got a dehydrator for xmas- i have wanted one since I first went raw back in August and I feel like it has opened up a whole new world of foods. So I read the manual and and re-read some books but I thought ya'll might have some tips for a newbie!
And my partner (who regularly eats McDonalds) is going to go raw with me for New Years! I am so stoked

I am pretty new to this myself...about 50% raw for a year, now about 90% raw for the last 3 months (getting a my excaliber really helped give me the edge...).
As far as tips for using the dehydrator are concerned, it is a fairly straight forward machine. It is great for making all sorts of treats, sweet and savory. For the most part, I don't really follow set recipes. I tend to mix things together, taste and adjust accordingly.
I like to make cookies out of my almond milk pulp (made a batch of cocao, banana, almond cookies last week...incredible). I also like to use the pulp from when I make Rejuvelac (I use sprouted rye) to make tasty crackers (food process until smooth, then mix about 2 c sprouted rye, 2 c sprouted lentils or chick peas, approx 4 c veggies such as red peppers, zuchinni, kale, carrots, season to taste with Nama Shoyu or Braggs and various spices pour onto Teflex, dehydrate on 105 degrees for several hours until the top is dry enough to allow you to turn over and remove Teflex, dry for several more hours until nice and crispy)

Live crackers, cookies, pizzas and calazones all of which are in Alissa's book. When I want something crunchy and dry the dehydrator foods hit the spot. Enjoy experimenting and let your taste buds soar!
