Merry Xmas everyone!

Just thought it would be fun (and inspiring!) to find out what beautiful foods we've got tucked away in our dehydrator.

Alright, I guess I have the honor to begin...

I had a real busy "uncooking" two days. Yesterday was sweet treats (See photo thread), today was savory (I've learned my lesson to not mix both with my onion-flavored macaroons! LOL :eek: )

OK, in there, "baking" away, I've got:

-Savory Nori Snacks from Raw Pleasure Australia's free ebook- so yum!!!

-Zucchini Roll-Ups from Sheryl's Celebration ebook (which I can't stop eating straight out of the dehydrator... It will be some miracle if there are any left by the time they're "ready"! :D )

-Celebration Loaf from Frederic Patenaude's Xmas Day ebook

I also had pizzas in there earlier but we devoured them for supper so I guess they don't count! :D

I'm sure you gonna love it! There's just so much to explore! The days are too short and my tommy is too small! LOL Hence my going on an uncooking marathon as soon as an excuse comes up! Hi!Hi!

The zucchini roll ups are not lasting here either. I had a container of them to bring out.. and they got eaten mysteriously before they were opened. They are also delicious half dehydrated as an appetizer (we know because we eat half of them out of the dehydrator before they are done).

eggplant bacon and onion bread which didn't finish in time for christmas dinner *cries*

I put the bacon in plastic bags because I saw pictures of someone doing that on the photo thread - but that completely stopped them changing. Only when I took them out 36 hours later did they start to change.

I don't have them in now, but today I'm going to be making kale chips and zucchini chips. I'm on a big savory kick lately. I'd like to make some yam chips as well, but I need to get out and buy some yams!

Oh... I would LOVE to try the Zucchini roll-ups.... can you post the recipe? I have some zucchini waiting to be used and they sound YUMMY

I have bananas in mine. I was going to add some apples as well, but decided I wanted to use them for something else.

Yum! Kale chips! I made those the first time I fired up my new Excalibur. When I opened the dehydrator to check on them, the fan actually blew them right out at me! (Grin)

Do you put the amount of cayenne the recipe calls for in the pate? I'm just wondering as I find they have quite a bite... You know how dehydrating can really intensify flavors. I like hot but Don isn't too keen on it. That's okay, more for me! LOL

Oh, I'm so glad you bought it! Aren't the picts incredible?! It's just gorgeous and the recipes really inspiring. The roll ups are so, so yummy! I can't stop eating them! LOL

All that you guys are talk ing about sounds wonderful!!!

Now i dont have anyt hing in the dehydrator today, BUT i have something chilling in the freezer. I guess they are almost like a nanimo bar - thats what id compare it to in cooked terms. A chocolately crust, a creamy middle, and chocolate on the top.

Im going to have some for dessert!

I have some Beta Burgers from "The Raw Gourmet" by Nomi Shannon in the dehydrator right now. I've never tried them before so I'm quite excited to see how they turn out.

I also HAD (up until a minute ago) some Zucchini Roll-ups from Sheryl's ebook. The recipe made a ton of pate and I only had one zucchini, a small one at that. I peeled it with a veggie peeler as I don't have a mandoline (but it's on my list of things to get). Before dehydrating I wasn't thrilled with the pate. It was okay but not mouth-watering amazing. After dehydrating for a few hours, it must bring out the taste or something because wrapped in the zucchini they are AMAZING. I just ate all of them... I couldn't stop. I wonder if anyone was able to actually dehydrate these until they were "done" without finishing them LOL...

You know, just an idea for all that left-over pate... Do you happen to have any nori sheets around? If you do, you can make fabulous snacks by spreading a thin layer of pate on nori, then another, put one on top of the other and cover up with a 3rd nori sheet. Dehydrate at 130 for a few hours then take out and cut into bite size strips with scissors. Then return to dehydrator, turn it down to 105 until fully dried.

Another one of those "can't stop eating eventhough it's not officially ready" recipes...LOL

Actually, it's based on a delicious recipe called "Savory Nori Snacks" from the Raw Pleasure Australia free ebook which Sheryl has put together too.

I just got an American Harvest dehydrator yesterday. I have some onion bread in there right now. I just got the recipe from a thread here started by Pansy in December 2004. I can't believe it's been going on for almost 2 years. Must be some Rawsom bread. :)

Carmella... I did see that recipe as I downloaded that ebook the other day. I don't have kitchen scissors... do you think a sharp knife would work? I'd hate to ruin it after all that work! Sounds yummy though and something I can make while I wait to stock up on more zucchini! I've got a few packs of Nori sheets just waiting to be used.

PERFECT! Go for it girl! The scissors only make it easier but a good sharp knife should do the job too. It's really just to cut the nori to smaller pieces...makes it easier to much on and faster to dehydrate.

Don't be dissapointed in me Carmella but I chickened out LOL. I just rolled up the nori with the pate like the zucchini roll-ups and dehydrated it that way.

Well... that being said, in the dehydrator I have some zucchini roll-ups, some nori roll-ups and the wrapper for Alissa's cannoli... mmm... can't wait to try that later...

im so bummed!!!! I had the almond bread in my dehydrator. Went to work this morning and asked my mom to turn if off at 1....when i got home at 4:30 it was still going and my poor bread got dried out...

anyone have suggestions for me? i dont want to use these as crackers. i was thinking i could use a nut mayo on the bread and it would help soften it..?? i dunno

Oh nooooooo! I'm sure SOMEthing can be done!

Your idea of putting a spread/mayo on it is good. You could also use it as a base for pizza. The tomato sauce will do the trick. If you like your pizza warm, dehydrate it for one or two hours but, here's the key, put it on a teflex sheet instead of directly on the mesh. At least, this little trick has served me really well for my crusts based on the calzone recipe which were SO thin and dried up that they were all wavy! By the time I took them out though, the kink was pretty much all gone. LOL

Thanks Carmella, you were right. The onion bread is great! I was able to make two rounds. For my first dehydrator experience, everything turned out great. Well worth the wait.

I can't wait to try something else.

I have banana/blackberry fruit leather in the dehydrator right now! I couldn't stop eating the mixture, i'm surprised any of it made it into the machine lol... I hope it will turn out!

Ooh, great idea carmella...the pizza crust!

yeah i ended up having some for dinner. i made chuky guacamole and "refried beans", spread them on the bread with fresh tomato slices and lettuce. it was very very good!
the fortunate thing is that the over dehydrating didnt lose any flavour!

Glad you've managed to salvage your bread after all... I forgot to suggest that you get a timer. We bought a cheap one at a hardware store or Walmart (can't remember exactly) and it comes in handy for those times when we're not around to switch the dehydrator on or off. Sure beats having overdried goodies...

i should put on a timer for my mom! next time i will rework things so that i dont have to rely on anyone else.

yuppers, salvaged the bread...man is it ever good! lol tonite i made a "taco salad" with it, using the bread crushed up as nacho chips. I think ill post the recipe in a new post because i enjoyed it so much :)

Just made a huge bowl of granola which is now in the dehydrator and smells amazing. There was so much it took up 2 and a half trays! I usually have fruit for breakfast but on these winter days there is nothing like a bowl of granola and almond milk :)

This thread is an inspiration to get out my dehydrator from under the cubbord and actually USE it...grin...

First, though, I need to make room for it, and counter space is limited... where is YOUR dehydrator and do you keep it in one place all the time, or store it when not in use?

My kitchen is small and we use the oven for Baking still, so that's out for sure.

So it's a go, I'll be spending a few days in Calgary with Don's sister, Sandy. We'll be "uncooking" up a storm together! LOL She's expecting her Excalibur any day now so hopefully it will arrive in time... I'd like to show her a few "winner" dehydrator recipes. So far, on my list is the following:

- Onion bread (luna99, It's one of my favorite smells too! So yum!)
-Almond bread (fairygirl, do you still don't put any herbs in yours? I'd like to give her the option depending on her taste...)
-Savori nori snacks
-Zucchini Roll ups
-Alissa's calzone crust for pizza
-Some sort of burgers; I like Raw Guru's recipe but any suggestion anyone?

-Maraw's Lemon and Chocolate Chewies
-Maraw's Crumble cookies

What am I missing?

Mmmmmmmmm, sounds yum! We have fruit smoothies all day until our main late afternoon meal...even in the winter. Makes me want to try granola from time to time though...specially when it's minus 12 like this morning! Brrrrrrr! How do you make it?

I'm glad you'll be giving your dehydrator another go... ;-)

We have ours in the bathroom as it's the only "closed" room in our log home. We have an Excalibur and the fan is a little loud so to have it in the kitchen would be like sleeping right next to it! LOL But I'd think that any unobstructive corner or room, preferably not too far from the kitchen, would do.

So what will you be making hey?

Maybe putting the dehydrator next to the dryer would do..hmm have to think creatively... what is your dehydrator sitting on, please tell?

Yop! We live wayyyyyyy in the boonies, tucked on top of a mountain in a log home. Sounds idillic hey? Well.... I gotta admit that it is! To top it all up, it's even called "Paradise Valley Road"! LOL Hum, don't know about posting pics as it's got nothing to do with raw food (other than that's where I make it!-grin). Oh, I know, I think there was a post a while back about pics of our raw kitchens... Maybe that would be a compromise. I'm working on a raw food blog so as soon as it's ready, I'll let you know and you could come have a look at our home there... LOL

We too used to eat the Ezekiel stuff but since making our own raw crackers and breads, we just don't feel like it anymore... I really recommend trying the onion bread and the herb almond bread posted somewhere on this forum (let me know if you have trouble locating the recipes). They are so so tasty! We just LOVE our raw sandwiches! In fact, that's what we're having tonight...

We put our dehydrator on a little tall table but anything would do. The idea is to make it easier to work with.

What kind of dehydrator do you have? I take it it's not an Excalibut or else you have humongous cobborts. LOL

my onion bread (first time making it) came out really strong as well... almost more of a really salty taste rather than a strong onion taste though.. I like it and will eat it all (maybe with some guacamole and tomato on top! mmm) but next time maybe I'll try to make it less strong somehow? :confused:

yippee!! great news that ure going to calgary! Yes im still making my almond bread without the herbs. In the summer when things are growing in my yard ill try with, but at this point i love the flavour as is.
i cant wait to hear about your trip!!!!

who build your log home? my bf is taking a log home building course in the fall and thats why we want to move to BC. maybe ill meet ya one day and we can uncook together :D

well, theres nothing in my de hydrator right now, in fact i put it away yesterday for the party to clear kitchen space because i usually have it out all the time next to my vita mix :)
ill be getting it back out tomorrow for the mushroom caps!

I know, I'm getting excited too! Sandy is really into it and wants tomake the most of our time together to learn more about how to prepare raw food. I'll be staying less time than I thought (only 3 days) so it promises to be intense (and very yummy!)

Your suggestions as to what I should make would be welcome!

Oh yeah, you were asking about the raw scene there. I don't really know for sure but Sandy did mention a potluck she went to a couple of weeks ago. The organizer was actually Diana, the woman who has been preparing Fred Patenaude's Holiday meals! What a small world hey?! I know she was gonna go to a Xmas raw meal prepared by her but then not enough people registered so she had to cancel... Bummer!

We actually live at a non-profit Retreat Center so it's not really our house. We've been living here for the last 4 1/2 years though and loving it! Not sure who built it... some people from California I believe.

If you do move to BC, I'd love for us to get together and do some uncooking!

I've got my marinated veggies all ready and am about to put them in the dehydrator to "stir-dry" along with some cauli-parsnip rice...

We're going to a New Years Eve party tonite. im brining a veggie tray with hummus and peanut butter balls. Im going to bend a bit and eat the cooked hummus, and there will be salad too...ill eat some of my raw cheesecake before going to satisfy my sweet tooth :D

What a great idea about the pics! I'll make sure to bring my camera along and I'll try (real hard) to remember to take pics before we devore everything! LOL

Don and I lived with a few other people back on Vancouver Island but now it's just us and the furry members of the family: Kylo (half siberian husky and half german sheppard), Angel (a black lab who "technically" is John and Livina's who are the caretakers of the land and live in the next cabin but she lives mostly with us as Kylo and her are TOTALLY in love! LOL) and "The Puss" (again, she was technically theirs but they left her with us one summer while they were gone and she hasn't left us since!) I think we're animal magnets or something... LOL

The stir dry was a real success (one more recipe to add to my list!) I made cauliflower and parsnip rice, threw the marinated and stir-dried veggies on top and drenched the whole thing with a tahini-ginger-garlic-lemon-tamari sauce. So yum!
Yep! I DID think about you when I was assembling everything but it didn't look as yummy as it tasted... so no pic!

I'll be making parts of Fred's Mexican New Year's Day menu tomorrow. Did you get it? If not, let me know.

in the dehydrator I have "cheese sticks" right now. I'm afraid they aren't going to be very good though.. I cut the recipe in half sorta (cause I didn't have enough sunflower seeds) and I think I put too much lemon juice.

oh well.. I guess I really have to face the fact that there will be no more cheese in my life. *cries one solitary tear for the cheese* lol. :p

It's been a while since I've done any major uncooking. (Well, aside from the raw lasagna that turned out fabulous yesterday! Pic to come shortly...)

But, I got a bunch of yummy smelling stuff in the dehydrator right now!

Let's see... I have:

-seasoned pumpkin and sunflower seeds (curry flavor and garlic-dill)
-Alissa's bean-less falafels (Oh my! Their smell is the one overpowering all the others! (Drooling!) :D
-Alissa's carrot pecan burgers
-and Russells' almond bread (herbed and plain versions)

I'm SOOOOO hungry... I've been eating the falafels off the tray! Hope there's some left by the time Don gets home! :p

Oh yeah, and I have my own rendition of fairygirl's Chocolate Cream Stack in the fridge!!! Yay! It looks incredible! Can't wait to try it!

Carmella, I'm hoping to make the almond bread tomorrow. Do let us know which you prefer. I JUST got the herbs de provence (sp) but I am curious how you like it without the herbs. I've never tried this mix and 3 T seems like a LOT of herb. Your thoughts? Thanks!!

OK, just had a piece of bread so that I could report to you about it! LOL

Mmmmmmm! The plain version is really great too! I'd recommend you split the recipe in two so you get to decide which you prefer? I like having 2 versions so it can fit the circumstances.

You're right! 3 tbs is a LOT of herbs! As I mentioned when I originally posted about the recipe, it has personality for sure! I cut down a little on the amount in the herb version this time. Haven't gotten around to tasting it yet... Perhaps you could start with less and work up to what feels right for you?

Oh yeah, I still didn't use the amounts of apple and zucchini he called for... I used 3 cups zucc and 1 med. apple.

Waiting on your bread report! :D

Ive got Alissa's pesto stuffed mushrooms in the dehydrator right now! Mmm - the pesto is soooo good. my mom thinks is better than chocolate?! - yeah, and she's a chocoholic! haha
Im making these for my dinner party next weekend and i wanted to do a test run now.

Ummm Carmella? u have so many yummy sounding things goin on at your place...can i come for dinner? :D

We had the falafels for dinner with a cucumber sauce recipe Alissa posted on a different forum quite a while back (I think it's different than the one in her book...) Anyway... Soooooo yum! They just melt in your mouth!

But the best part was dessert!!! We had left-overs from your Chocolate Cream Stack with fresh persimmon! Oh my! Don yelled at me from upstairs:"I'm in heaven!" LOL

Something simple - bananas. My family started eating these, which we call Banana Taffy, when we first became vegan 18 years ago. A simple treat that never grows old.

I made sausage today! I really miss it so I tweaked one of Alissa's recipes to include ingredients I have here.

Last year I got some awesome king boletes and dehydrated them.
You can also just use portabellas from the supermarket or even the little white button mushrooms.

You can probably also use other grains, although I don't like oats because they're often bitter.

You can double this if you want. I'm only one person, so I made a small batch. The house smells so yummy!

1 cup rehydrated boletes
1/2 cup cashews
1/4 cup sprouted buckwheat
1 tablespoon olive oil
1 tablespoon sage
1/4 tsp ground allspice
1/2 teaspoon cloves
1/4 teaspoon ground black pepper
1/2 teaspoon Herbs of Province
1 garlic clove, minced
1 teaspoon Braggs aminos OR you can use 1/2 teaspoon celtic seasalt
Adjust the saltiness to your own taste
1/4 teaspoon cayenne pepper

Mix this all up until it is smooth. It will be sticky.
Make into patties. I found this easier if I dipped a spoonful into my palm then rolled it in date soaking water. Hopefully it will give it a little sweet taste.
I made my patties about 1/2 inch thick. Dehydrate...

They're a wild mushroom I pick. :D

When I'm mushrooming, I put on my "mushroom eyes" depending on what I"m looking for. When I search for morels, I squat down and scan the horizon for shadowy pyramids. When I look for chanterelles, I look for their bright orange color.

When I look for King Boletes, I look for what appears to be one of my mom's biscuits sticking out of the ground! The color and texture of the cap is just like a good old country biscuit.

Thank you for the information, I was thinking it was probably mushroom, but was not sure. Where do you live that you can just go out and pick them. Great information. Thank you. :)

I have Alissa's banana bread and morning muffins (with pumpkin seeds instead of almonds, since I don't have almonds) currently in the dehydrator :)

I snuck a taste of the banana bread when I was flipping it (turned into a huge mess haha) and omg, sooo yummy! I can't wait to try it when it's done!

OK, let's see... I haven't had a major major uncooking day since Calgary.

Today, I finally took the plunge and am making the calzone. So it's in the D right now. I'm just about to put the filling in. Let's hope it all goes smooth.

What else? Oh yeah...

- Alissa's pizza bread (mmmmmmmm the batter was sooooo yum! I get a sense that it's what inspired Russell James for his Almond Bread.)

- Some pizza crust experiment of mine with barley and ground flax

- RawGuru's veggie burgers

- Alissa's meatloaf made into patties

... and I'm just about to put in her Pineapple Cake made into cookies

Yay! I love trying new stuff! (Doing the D-Dance around the kitchen) LOL :D
