Okay, I'm trying to go more raw and I had to bring a salad to my mom's for Christmas Eve.
I came up with this. Pardon the fact that my measurements are not exact.
Broccoli Cranberry Surprise
1/2 a head of broccoli chopped fairly fine with a food processor
2 apples cut in small chunks
5-6 handfuls of chopped spinach
1 handful soaked almonds finely chopped in food processor
I also had pecans so I added some of them too (1/2 a handful)
2-3 tablespoons of hemp seed (Nutiva)
1/4 head of cauliflower diced small, not as small as the brocolli (my husband suggested I not chop it too fine because cauliflower can have a strong flavor)
1/3-1/2 cup of dried cranberries
Of course many of these measurements can be varied based on your likes.
Dressing: (several of these ingredients are not all raw)
3/4-1 cup Vegenaise (Grapeseed oil version)
2 tsp fresh lemon juice
1-2 tablespoons ? almond milk (can add more if needed for consistency)
1/2 tsp. Sucanat
Stir and add to brocolli mixture. Can make more if the salad is too dry.
I thought it turned out great and I will mark this one up as a keeper!
