So I made Russell's mince pies yesterday and OMG, they're just out of this world! Oh man, oh man, oh man! The real stars of my Xmas platter!

The crust did not turn out like the one on the pic at all. As you'll see, the batter is much darker. I think it's to do with the type of apricots you use. Same thing happened with fairygirl's apricot ginger cookies as you can see. (I'm about to post my pics on the Photo only thread...)

The batter was a little sticky so I popped it in the freezer for a few hours. It made rolling out super easy. I then dehydrated the crusts for a few hours, then put the filling and popped them back in for a couple more hours. I also added a lid to some (so as to compare with the other pic). Oh wow! Seriously! Where have mince pies been all my life! :D I feel kinda silly as I always thought that these were savory (hence the title of my previous post). I think it's because I associated them with "minced meat"... :p yuk!

I had lots of extra pie shells left over and, let me tell you, I'm a happy camper! This means I'll get to make some more! Youppi!

carmella, those look great,
and yes mince pies are definatley a sweet, we usually eat them with cream or custard, sometimes warm through, and at this time of year, we leave a couple out for santa.

Thanks! Ooops! Did I forget to say we had them with whipped cream too? LOL

Wow! Looks delicious! Especially with all the whipped cream on top!

That's funny, I always thought mince pies were savory too! :p

I will be making these pies for New Years, i can't wait :) :) .
Tell me how did you make your whipped cream? It really looks good.

The whipped cream recipe is on Russell's blog, along with the mince pies. Oh, you'll just LOVE the pies! They're fabulous!

I forgot to mention that I added more orange zest and spices (I put allspice but it called for mixed spices, whatever that is!)

Hey Bethanie,
Have you made the pie crusts yet?

I just remembered you were looking for substitutes for the apricots... I think dates or raisins would do just fine!
