HI Todd! Did you ever go back to that other thread about this? I suggested processing cauliflower to look like bulgar for your tabouli. Did you ever try that? Just curious!

Hi Sharon,

I am in a fast now so I have not been able to try it. But I definitely plan to....I saw a similar recipe that included sesame seeds yesterday. I can't wait! Only 10 more days!!

I love my steel cut oat groats. I know that oat groats (whole ones) are raw, not sure about the steel cut ones. I mean, I ASSUME they're raw, but I'm finding everyday it seems that what we think is raw, what SAYS it's raw isn't "truly" raw and I'm wondering do I really need to be concerned with it. But that's another thread ;)

Anyway, the cauliflower sounds like a good sub as does parsnips. I have seen recipes for "rice" that use cauliflower and I've also seen parsnips (peeled and then processed til grainy in the processor). I've used the parsnips processed with pinenuts (plus a little seasoning) for "rice" and it's pretty good.

Ok...Steel cut are the same as oat groats except they have been cut by steel.......LOL I found this out today......Yaaaaaah!! I have raw tabouli!!

Here is a quote from the Can-Oat Milling Company site. It seems that their Oat Groats have been 'heat treated', not sure if it's the same for other producers. The site didn't say who they supply, but one of their pages said they export 95% of their production. Sorry if your disappointed, I know I was.

"Whole oat groats are oats that have had the hulls removed and have been heat treated to stabilize enzymes which cause rancidity. Steel cut oat groats are whole oat groats that have each been cut into two or four pieces."

Todd - If your using Whole Oat Groats, one way to tell if they are raw - try sprouting them.
