I can't decide which soup to make for Christmas dinner -

I hardly ever make "prepared" food, I live off smoothies and whole foods, so when I make meals for special occasions, I've no idea what I'm doing/what they'll taste like. If anyone's tried any of the above, could you possibly tell me what they're like? Thankyou!

I don't have advice on the soups, but I was wondering if you could give me some examples of what kind of smoothies you make and a general idea of your daily meals. As of late, raw is not doing it for me, so I've been eating a lot of cooked, and I just have no desire to get back on the raw path because none of it sounds good. I'd like to simplify it to see if that'd help me get a taste back for it. Thanks & sorry about the thread hijack. You can email me if you'd rather it be through there and not this thread.

I know it's not on the list but I'd suggest the Boutenkos' Rawsian Borscht. It's such a beautiful color and it's delicious! Let me know if you still haven't found your raw books. I'll post the recipe.

I enjoy the "cream of" soups which are basically a base of cashews and corn with water pureed, then you add the main ingredient e.g. tomato, corn, celery, etc. I don't have th exact measurements but here is something off my memory:

1/2 cup corn kernels (frozen works too)
1/4 cup cashews
1/2 cup water
Celtic salt to taste
other seasonings of choice (pepper, cayenne, Italian seasoning, herbs, etc.)

Blend, streaming in additional water after everything has been pureed.

Blend in:

tomatoes for cream of tomato soup
celery for cream of celery soup
carrot juice for cream of carrot soup
additional corn for cream of corn soup
mushrooms for cream of mushroom soup

Blend until warm or heat gently on stove to 120. I sometimes let it get warmer because I'm not one for cold soup.

You can also add some chopped tomato, celery, shredded carrots, corn, or mushrooms to get some chunky/chewies in there.

Sure, it's ok I don't mind you hijacking the thread. I love smoothies because they fill me up, so I don't want cooked food, and I have a sweet tooth so I love the taste. It feels really decadent to have them every day.

Smoothies I make -

Avocado Pudding -
1 small or 1/2 large avocado blended with 2 bananas and 150g berries or apricots
eaten in a bowl with a spoon.

Green Smoothies -
200g kale with 4 bananas or
watercress,spinach,rocket with pineapple or
nettle with mango

Milk Shakes -
Nut/Seed milk (I have a nut milk maker) or hemp seeds with 1 banana and strawberries or blackberries

Blended fruit -
Instead of water I blend oranges first, to make a liquid and then add a mixture of any fruit. I love nectarine-heavy blends. Strawberries are another favourite ingredient. I had pineapple every day for a while. Sometimes I blend just mango by itself and eat with a spoon. I use common everyday fruit like apples and pears too though. To me, whatever fruit I throw in tastes wonderful.

My daily diet changes all the time, I tend to eat the same thing every day for a few weeks and then switch to something else. I always eat lots of bananas and avocados. A lot of raw foodists say bananas are bad for you, but I feel better the more of them I eat. They seem to balance my blood sugar levels, if I don't have them, all the sugar from the other fruit makes me tearful and nervey. Sometimes I have nuts/seeds every day and sometimes I don't have any for a few months.
I try to have greens every day. If I don't have them for a while I don't feel like eating them, but if I have them a lot I crave them.

At the moment my daily diet is -

Blueberry-avocado smoothie
strawberry or raspberry or apricot-avocado smoothie
blended fruit or milk shake
2 glasses green smoothie
dark leafy greens eaten straight out of the bag alone or with cherry tomatoes
4/5 clementines
sometimes - bananas eaten in same mouthful as brazil nuts which reminds me of banana sandwiches

other things I've eaten daily for a while -
a box of red grapes
a couple of apples
fruit juice (strawberry/clementine or apple or a random mix of fruit)
water with lemon squeezed in
brazil nuts eaten in same moutful as cherry tomatoes
soaked chickpeas (garbanzo beans)

other things I have sometimes but not daily -
sundried black olives
passionfruit
fresh medjool dates
watermelon
other melon
seaweed
beansprouts
chinese-style beansprouts (the long things you buy in the shops)
kale marinated in lemon juice
cherries
mushrooms
broad beans
peas in the pod
spring onions (I think they're called green onion in America) - I don't eat them in front of anyone though, they'd think it was really weird eating them by themselves.


If I want something more complicated, I top a romaine leaf with avocado, chopped spring onions, cherry tomatoes, sometimes cress or alfalfa, and then another leaf.

Thankyou, that would be really kind of you, but I remember it had beets in and I don't have any, and the shops are closed. You're right though the colour would have been great for Christmas. I'll definately try it at some point in the future though, if you say it's delicious. I would never have tried it because when I was little, my family had cooked beetroots with salads, and I didn't like them at all. I love beetroot juice now, so I suppose the soup is similar.....I'll put that on my todo list :p

I know, if it was just for me, I'd have had blueberry smoothie, my favourite. But my mother is having her first raw Christmas and is cooking normal christmas dinner for other people, so the temptation for her will be huge, so I'm making a fancy christmas dinner for her. I never liked cooked turkey dinners, and I don't particularly like the raw version. My favourite fancy food is Italian so I would have liked to make Juliano's Pasta Marinara, but she wanted faux Turkey so that's what I've done.

Yes this was sort of her Christmas present plus some raw chocolates.
I think it was successful - she had one roast potato, nothing else, and ate everything on her plate except green beans. Yay.

I made the Raw Family chicken noodle soup.

I remembered in the book Eating without Heating, the recipe was different - they only said to add grated potato and dehydrated mushroom. Sergei said when the mushrooms absorb the liquid they taste like chicken. So I did that, plus parsley, no carrot. I placed the bowl of soup in a bowl of boiling water until it was not warm, but not cold. It was nice. :)

I made Alissa's broccoli soup yesterday and it was wonderful! I couldn't believe how creamy it was, and how delicious. I've tried broccoli in smoothies and it was disgusting, so I was amazed blended broccoli could taste so good.

I made a different butternut squash soup the next day, the one from the christmas ebook by Patenaude. I didn't like it at all, I had to force it down, and had a bad taste in my mouth all day. Spoiled my meal totally.
But my mum thought it was wonderful and its far and away her favourite soup so far. So there ya go. Different soups for different ....err...groups! Different blends for different friends :p

The next day I used the leftover gravy from the thanksgiving ebook. It didn't taste so good so I added cauliflower and cumin and blended it into a soup
It looked like mushroom soup, and tasted like alissa's broccoli soup but with cauliflower tones. It was nice.

I've never made raw soups before - I don't really like vegetables so I thought I wouldn't like them blended, but I was wrong. I love them! Now I've started, I can't stop! I'm still craving Alissa's broccoli soup and the ingredients for it are in my blender waiting for my mum to arrive.
Meanwhile I made one up for my lunch with ingredients I had to spare. 2 small carrots, 2 sticks celery, 1 green onion, 1 cup water, 1/2 clove garlic, 1/2 teaspoon herbamare (I don't usually have salt, so I'm going to have to learn to make good saltless soups), 1 heaped teaspoon brazil nut butter, and a small handful of dried dulse.
It was yummy, although I wouldn't serve it to guests.

Soups are our daily staples! Well, along with green smoothies. What we've discovered over the years is that it's better to blend just a few different veggies. That way, your soup has a certain predominant theme. Otherwise, it's just a big veggie mush (which is fine too! LOL) but when you have soups everyday, they tend to get boring. Here are some of our favorite soups:

Maraw’s Spinach & Herb Soup

I make this almost daily. Yes, it's that good - and filling too!

3 C of fresh raw spinach
1 C frozen sweet green peas
2 1/2-3 C almond milk
1 kiwi, peeled
2 celery stalks
1/2 C cilantro
4 basil leaves
2 green onions
juice of 1 lime
1/2 tsp. sea salt (or to taste)

Place all ingredients in a Vitamix or high-powered blender and process until smooth. Serves 4-6

C's note: So incredibly yum! We make it twice a week...

Green Raw Soup
The PH Miracle

1-2 avocados
1-2 cucumbers
1 jalapeno pepper, seeded
2 green onions
1-2 cups veggie stock or water
3 garlic cloves, crushed
handful fresh cilantro
handful fresh parsley
1 carrot finely diced

Puree all ingredients (except carrots) in food processor or blender. Add water until desired consistency is reached. Garnish with carrots. Serves 4-6


Popeye Soup
The PH Miracle

1 avocado
1 cup water or veggie stock
2 cucumbers
1 cup raw spinach
2 green onions
1/3 red bell pepper
1 garlic clove
Bragg’s or Real Salt to taste
½-1 tsp: garam masala and curry
lime or lemon juice, to taste

In blender, add avo and half the water and puree, then add the rest of the ingredients. Thin with remaining water. Serves 4-6


CURRIED CAULIFLOWER SOUP

Water from 1 coconut (or ¼ cup coconut milk)
2 cups cauliflower
2–3 ribs celery
1/4 cup water
1/4 cup cold pressed olive oil
1/3 cup raw cashews
1/8 cup Nama Shoyu
1/2 tsp. curry powder
1/8 cup fresh lemon juice
3-4 cloves peeled garlic


In a blender, combine all ingredients and thoroughly blend. Serve garnished with chopped cauliflower florets. Serves 4

Note: I used 1/2 avocado instead of the oil and left-over Cashew Curry Sauce (see Dressings section) instead of cashews. Yum!

Mmmmmmmmm! Just had a new soup tonight... Wow! The Raw BC Society was introducing it as "Raw Family’s All New, Stupendously Magnificent, Outstandingly Exceptional:" (...and they weren't lying!)

Green Spinach Soup
Boutenko

3 Small avocados (or one extra large)
2 Red bell peppers
½ Bunch cilantro
½ Bunch Organic Spinach
2 Small lemons (without seeds) -we put less
3 Cups pure water
1 Small jalapeno pepper
½ Teaspoon celtic sea salt (optional)

Put all the ingredients in a Vita-Mix blender and blend well using the tamper.

Once the ingredients are well blended, pour the soup into a large bowl.

Add thinly sliced napa cabbage or red cabbage and dulse leaves or flakes.

Serves 6

C’s notes: Another example of how simple is best!

Here's another winner to our tastebuds...

CREAM OF ZUCCHINI SOUP: (from Raw Food Cuisine)
1/2 C water
1 C chopped zucchini
1 stalk celery chopped
1 Tbl lemon juice
1 tsp mellow white miso
1 clove garlic crushed
1/4 tsp sea salt
dash cayenne
1 Tbl olive oil
1/2 avocado peeled chopped
1 Tbl minced dill or 1 tsp dillweed

*Add all ingredients except last three (olive oil, avocado, dill) blend smooth
*Next add in olive oil and avocado... blend smooth
*Add in dill blend briefly... Serve

I've been eying the raw family spinach soup for a while - they introduced it in their email newsletter as the greatest soup ever, and I found it difficult to believe, I'm glad you've tried it first. I'll make sure I buy the ingredients now. (I never seem to have that combination of things in)

I love that most of your soups don't contain nuts, I need to cut down on those.

I've been making Alissa's broccoli soup with kale, which tastes almost the same, but turns out green instead of white. I only used a handful of almonds too, I thought that would spoil it and make it less creamy, but it didn't. I think I'm addicted.

Happy to hear the brocolli soup is so good...it's on my list to make this week. I have been wanting some more meal ideas, but I too have been eating very simple and liking it. I am finding a lot of prepared meals are too rich for me now that my tastes are changing..but soup sounds just right. Great thread.

You know, you're really giving me second thoughts about my take on her broccoli soup. We made it once and weren't thrilled at all as we then found the broccoli taste a little too overwhelming. This was earlier on our raw journey and, since then, I've noticed that our tastebuds have started to change. I guess we're getting used to the intensity of raw. So I'll give it another try. Thanks for sharing the variations you've been making too. These sound great!

Actually, I hadn't checked this thread in a while and just had the Boutenko spinach soup again for supper. Yum!

I made Alissa's Broccoli soup...but I did not have any almonds soaked so I used cashews..YUM- Creamy-oh so good! :D

I did mine in the Vita-Mix & let the machine heat it up a little-what a great soup...

Love this thread-as soups have been my one difficulty w/Raw in that I have thrown out so many batches.

You've definately persuaded me to try the spinach soup, I just need to gather the ingredients....I keep using my peppers in other things.

The broccoli soup sort of grew on me. The first time I liked it but not particularly. Yet afterwards I kept wanting more, and from then on it was a steady trip down the road to addiction. I've made it several times now (with broccoli) and it's been quite different each time - sometimes it tastes of broccoli and sometimes it doesn't. The first time I expected it be dark green and was surprised it was completely white, the last time it was a light green colour. I followed the recipe to the letter (except for more cumin and salt) so I can't explain that.

Don't take my word for it - it might just be me that adores the broccoli soup. I've got peculiar taste!

My mum completely adored the butternut squash soup, its her favourite, whereas I found it really unpleasant, and felt sick for the rest of the day from forcing myself to eat something I didn't like.

What's your favourite raw vegetable? If you look for a soup made from that, you'll be more likely to love it.

When I make soup without using a recipe I've been using fresh herbs (thyme or oregano) and lemon juice instead of salt.

How spicey is it?? When I was little I couldn't even eat polo mints except with water. I'm much better able to tolerate hot things now, but still less than most peopl. The chillie recipe that's on this forum was a million times too hot for me, I couldn't eat it at all.

Should I use less jalapeno and ginger?

I put ginger in every salad dressing I make. Sometimes I even eat slices of it.... I LOVE it!
But you may find a good substitute for you soup.. maybe just using less would work well for you

I am enjoying Alissa's broccoli soup as I type. Delicious. I subbed macs for the almonds and it is decandently creamy. Will probably try putting in shallot instead of the garlic and onion next time as it seems to grab me too much. Now I have to branch out and try some of Bobbie's variations on this soup, too.

I was hungry so I grabbed some leftover Broccoli soup- Alissa's recipe...& mind you-I am so afraid that I will NOT like cold soups...but I was brave & tasted it & Guess what...

LOVED IT

Maybe the taste buds do change. Here's to trying more Raw soups..

That's what I had for dinner... a modified version of Alissa's Broccoli Soup. My avocados aren't ripe (seems this is always the case) so I used some almond milk and cashews. Turned out very very good.

I'm going to try it today - I've finally managed to gather all the ingredients. I'll make it without the spicy things and then gradually add small amounts. Is it a Mexican soup do you think? I was thinking of making it for a Mexican dinner next week.

Ouch I can't imagine eating slices of ginger!! I like carrot and ginger juice. I used to love ginger biscuits and ginger beer/ale. I've never tried making a raw version.

I'm glad its not just me that loves the broccoli soup. I made it for a 4 course dinner for my mother and her sister (cooked-eater) and they really liked it. So its on my list of cooked-eater-friendly recipes now.

Has anyone tried the thai/coconut soup in Kate Wood's book Eat Smart Eat Raw? I've been wanting to try it for years because she says in the book she ate it every day for a long time and that its a special one to serve to guests. But I've not managed to get hold of galangal until this week. I think its called Thai soup. It contains coconut, and is also used in the recipe for Thai curry.
Now I have galangal but I can't find the book. I can't win.

Soups Soups Soups! Ahhhhhhh! We just LOVE them! We have a huge bowl everyday to start our evening meal.

Yes, we do prefer our soups slightly warm. We gently warm them up on the stove while stiring with a spoon. You could also put the soup in the dehydrator.

In Calgary, I made the Boutenko Spinach soup, Maraw's Spinach and Herb (our fave these days!), the Boutenko Borscht (soooooooo good! Even our guests, Diana Stovelaar and her partner Manu (the local raw food authorities), absolutely loved it!) and the Thai Coconut Soup from the Holiday Celebration ebook only we used fresh thai coconut. I'd suggest you just blend fresh coconut flesh and water, spice it up Thai style (galangal or ginger, garlic, lemongrass, lime or kefir lime leaves and a little red pepper flakes) oh, and salt to taste. Then add a bunch of thinly sliced veggies in your bowl such as red peppers, green onion, mushroom, carrot and a few peas. Yum! Oh, I was forgetting the best part...cubes of avocado and a little chopped cilantro! Heavenly!

We got a huge broccoli so I'll try to make the Broccoli soup again and see if our tastebuds feel better about it.

And speaking of great soups, I just had the privilege of being a recipe tester for Maraw's Creamy Avocado & Curry Soup. We found the recipe a little too salty for our tastebuds (which can totally be adjusted) but other than that, it was divine! So simple too.

Here's the soup Don created while I was away. It's a new favorite! He said he made it 3 days in a row! LOL

Pilgrim's Creamy Soup

2 cups water
3 or 4 celery stalks
1/2 avocado
2 green onions
1 sm. zucchini
1 med. Jerusalem artichoke (gives it a slightly sweet and earthy taste...yum!)
handful of parsley
handful of cilantro
1 small tomato
1 tbs miso
1 tbs tahini

Enjoy!

I am getting into soups big-time now. I used to hate them-unless they were fruit-but my tastes have changed. :D

Thank you for starting this wonderful thread. Soup has always had a special place for me, so I am truly enjoying all the suggestions/recipes. With all the raw un-cook books I have, it has been exciting and adventuresome to search them and search here for great ideas. "Soup central" as Lana calls it. Broccoli is still #1 with me. Alissa's recipe rocks!

Just sooooooooooooo yummy!! I didn't prepare the Spinach Soup because I'm just waitin' for my avos to ripen...but I came in from work and was set on having some soup so I made Carmella's "Cream of...." Corn soup and it is SOOOO DEVINE. I honestly can't believe how good it is. I added a little honey, a few pieces of jalapeno pepper, a dash of sea salt, and a sprinkle of cayenne..and it is sooo freakin' good! :D

I just finished making your cream of corn chowder. Awsome. Simply topped with a sprinkling of dried dill weed and finely diced a few slices of raw tomato--it is devine and soothing. Thank you so much for sharing your recipes. I will be making many many variations of these soups.

I made it this morning..I halved everything since it's just me...but I think the red bell pepper is what turned me off. I tried adding some curry powder to make it taste better but it didn't help much. Anybody have any ideas as to what i can possibly do with the rest other than toss it??

Maybe put in your favorite flavoring--herb or spice and add flax or ground flax (whole or ground pepita also works well) and dehydrate into crackers. Have done this with some of the recipes that turned out to not be "favorites." Recycle, reuse or recreate is my motto.

I finally made Alissa's Broc Soup last nite and you were right! It's delish! I guess when I made it before, I used only almond milk instead of whole almonds. Makes quite a difference! Also, I soaked the almonds first and the soup turned out really, really thick with the amount of water she was calling for. Then it dawned on me that soaked almonds are a lot bigger than dried almonds... I'll know for next time!

This recipe is BY FAR the best soup I have yet to try and I eat raw soups alot. This soup is very thick and very filling. I made a cheeze sandwich to dunk into the soup from Russle's almond bread (http://therawchef.blogs.com/russell_james/2006/03/the_best_thing_.html) (with no herbs) and the Rich Cheddar Sauce from Carmella's blog (http://thesunnyrawkitchen.blogspot.com/2007/02/in-sandys-sunny-kitchen-part-3.html).

Here's the text, (I made a few changes, they are in blue):

Simple Tomato Soup:
2cups cherry or heirloom tomatoes (I used 2 vine ripe tomatoes)
2cups sun-dried tomatoes (soaked) reserve 1/2cup for the sauce
1/2cup raw cashews (soaked)
1/2cup olive oil (1/4 C)
1cup tomato soak water
small clove garlic
1/4cup shallot (chopped) (I used sweet onion)
sea salt and pepper to taste

Throw it all in a blender!

Then....

Smokin' Hott Tomato sauce
1/2cup sun-dried tomatoes (soaked)
1/2cup olive oil (1/4... maybe even less, I used more soak water than oil)
1Tablespoon chili flakes (I used 1 1/2 t chili powder)
1Tablespoon honey or agave syrup
1teaspoon smoked sea salt (regular sea salt)
filtered water or tomato soak water to thin
2Tablespoons chives (chopped) to garnish
Put this in a mini food processor or blender and drizzle over the top of the soup. Garnish with chives. YUM
