View Full Version : Apricot Ginger Cookies

Here's my apricot cookie recipe i came up with the other nite. these will be on the table for christmas along with other raw (and cooked) goodies. I also have a batch of Maraw's lemon chewies in the dehydrator right now!
Oh, and these are approximates because i dont measure anything
2 cups almons, soaked
2.5 cups dried apricots, soaked
1/3 cup sunflower seeds, soaked (not necessary, u can use more almonds)
1/4 cup dates
1/3 cup agave
2 tbs ground flax seed
1 tbs fresh ginger
1 tsp powdered ginger
1/8 tsp cinnamon
1/2 tsp pure vanilla
Process the almonds in a food processor. Then add the rest of the ingredients and process until smooth. IF its too wet, add more flax or nuts... but just enuf to make it pipable.
Then pipe or spoon onto teflex and dehydrate at 110 about 10-12 hours ( i did it overnite). Somewhere along the way transfer to the mesh sheet to dehydrate the bottom a bit. They should still be moist on the inside.
OH, and i put a little piece of soaked apricot on each as u can see in the pic.

You bet me to the punch of asking for the recipe. I saw the picture first and I was blown away almost to your house. Thanks for sharing your gems. Now being "clueless" in creating that beautiful cookie pattern how did you do it? Cookie press which I don't own or???????? What kind of cookie press? Clues to buying one. My gosh, girl, you are UNcooking up a WAR not a storm here! Absolutely delicious and if I could grab a bite through the net, I would. Totally impressive and I bet delicious!!!!!!!!! My husband even loved seeing your pictures. Thanks.

wow, thank you for the wonderful compliments, you are a sweetheart.
Ok, simple way to get the cookies like that. A pastry piping bag with a large star tip on the end. easy peasy...i bet u could buy one at wal-mart. and of course u are welcome to be blown to my house and i could show u how to use the piping bag ;) lol

I forgot to add that i had some maple syrup in there too...altho u can use agave. about 1/4 cup

Thanks for piping reply. This is a sweettttttttttt cookie to go to bed dreaming about. Off to bed now. Ready to dream away! Shall it be Ginger Stars (cookies) or Apricot Ginger cookies that will highlight my dream? I knew I would have a reason to keep my cookie cutters, but where are they hidden when I want them? It's been such a long time, so I guess it's time to go through my junk, I meant stuff, and find what I am ready to bring back to the resurrection state. I feel like I'm reverting back to my youth. I don't even have to take pills or get a face lift to experience this type of joy that makes me think or maybe the word is feel youthful. May sound crazy to some, but to me a reality. I suppose I missed much fun growing up and even into adulthood, so I'm making up for the lost time and fun. No never owned a piping kit either. Thanks again. Oh, are you US, Canada or? Maybe Texas, like Dallas where I will visit next month?

Here are my cookie recipes. Sorry I didnt take a pic. I will next time.
Cashew Apricot Cookies
* 2 cups Cashews soaked overnight
* 1 cup Sweet and sour dried or fresh apricots
* 1 cup soaked Raisins (small cup)
* 2 overriped bananas
Blend till the crumby consistency, use a spoon to spoon the batter out on a dehydrator plastic tray. Dehydrate for 24 hours or until dry (do not over dry) at the temperature of 105 F. Turn them over in 8-12 hours or when you see that one side is dry enough.
Blueberry Cookies
* 2 cups Blueberries
* 2 cups Almonds (soaked overnight and blanched)
* 1 cup soaked raisins (small cup)

Hey FG,
I made your apricot ginger cookies as part of my Xmas mega "uncooking" yesterday. I had so many sweet goodies in there... It smelled divine! Don and I just stuck our noses to the front vent of the Excalibur and closed our eyes! LOL Oh my! Heaven!
The batter was a little wet so I ended up adding more nuts and more flax. Unfortunately, a bit too much of the latter so they turned out a little goey, if you know what I mean. They're still yummy though... I might add a touch more ginger next time as we just LOVE ginger.
As I didn't have a pipe thingie, I improvised one by cutting a little whole in the corner of a ziploc bag. It didn't make fancy designs like yours but it worked pretty good. I made them into little swirls. You'll notice how they turned out a TOTALLY different color than yours. I used the dark apricot kind (turkish?). You can see my Xmas pics on the Photo Only thread.
We had a little Xmas brunch so that we could taste all the yummy treats I prepared. WOW!

I made this and tried to pipe it out.. however it kept jamming up the end. I think mine is made for icing (just bought it) not cookies though. I need one with a larger end piece. I will keep my eyes open, because they just look so beautiful in your photo. Sort of like the coconut cashew lemon cookies they sell raw in California.
