View Full Version : Let 'em Eat Cake Recipe

(this is the recipe for which my dh won a $250 gift certificate to the grocery store. Someone asked for it so I posted it here)

16 oz raw almonds
16 oz dates
2 big bunches of bananas
2 cups cherries, pitted (optional)
2 cups blueberries
cake pan (bundt probably works the best)

In a food processor, pulse chop the almonds and set aside. Blend each other ingredient separately, set aside and then stary layering in the cake pan in this order: almonds, dates, almonds, bananas, almonds, cherries, almonds, blueberries, etc. (a layer of almonds should be inbetween each item) ending with a layer of dates on the top of the cake.

Freeze overnight and in the morning, take the raw cake out of the freezer and dip the bottom of the pan in warm water to loosen. Turn the pan over and it should be ready to slide out of the pan in twenty minutes. Slice, serve and enjoy!!

Yeah I would like this but c'mon - where are you going to find cherries? Are you going to rehydrate some? Use frozen?

I am pretty sure you could do without or add another fruit as a sub. ;)

Do you blend the dates with a bit of water to make a paste?

It might work better that way, but I never do. I just blend them like they are. I don't even soak them overnight but that might work, too - if you are having trouble turning the dates into a paste.

Sometimes, I blend the bananas and dates together to make a paste because I really like how bananas and dates taste together.

Someone asked where you could find cherries this time of year. They are still selling them in the produce section at some of the stores here. I was surprised to even see them being advertised on sale. But you don't have to put cherries in the recipe if you don't want. Sometimes, I just use almonds, bananas and dates and that works good enough for me. The best part about this recipe? You can create your own version of it by using different types of fruits. There is no one right way to make this recipe. That's what I love about it!

Oh, can someone please post a picture after making this? I want to see how your Let Em Eat Cake comes out and looks! Mine always seems to be lopsided for some reason. Oh well. It's still so good. Maybe someone can give me some pointers on how not to make it lopsided. I don't have a bundt cake pan so I just use a small plastic bowl.
