I am in the middle of making those ginger cookies. I need help. Am I supposed to use powdered ginger or fresh ginger?

Ooops! I realize I'm probably wayyyyy too late to be helpful but I think it's powdered ginger. That's what I used anyway and they were yum.
BTW, I've been meaning to write to you. Your pics posted a few weeks ago looked wonderful! You've tempted me to make the Eggplant parmesan... It looks like it's quite a big recipe though. Did it keep well or do you think I could freeze the left-overs? Your apple pie looks soooooooo delish! Is it Alissa's recipe?

Carmella...thanks. I did end up using powdered ginger. They are still in the dehydrator, but I have already had a couple & they are yummy.
I made the whole Eggplant Parmesan recipe, ate some & froze the rest in single serving freezer bags. It is delicious but very rich. I do love it very much though.
Now...on to the Apple Pie. Yes, it is Alissa's. I LOVE this pie. I have already made about 6 of them. I took 2 of them to Holiday parties (that way I have something great to eat) & I always have one in the fridge so I can have a piece everyday. It is amazing! :-)

Oh, Ginger Cookies sound great. I'm thinking ginger powder too.
