These are crunchy, soft, sweet and savory all in one.
They're also beautiful to serve.
I love them! I"m eating them tonight while my bread dehydrates!
The mixture is also great on crackers or bread or to stuff ANY veggie.
1 avocado, diced
1/8 cup olive oil
1 cup frozen or fresh corn kernals
1/2 diced green bell pepper
3 garlic cloves, minced
1 inch slice of red onion, diced
1 cup diced fresh fruit or small fresh berries. Mango or blueberries are nice, but experiment!
Juice from 1/2 lemon
1 tsp ground cumin
1 tsp ground chili powder
1 tsp ground basil
2 tsps minced jalepeno (optional)
Salt & pepper to taste
Mix this all up and set it aside.
Clean 2 bell peppers - I like red, but it doesn't matter.
Cut them in half, then cut each half in thirds
Stuff each section with the mixture and eat it!
