I ended up tossing the almond biscotti today. It was very dry and styrofoamy in the mouth... just didn't taste good.
Did anyone else have better luck?

I did a biscotti from coconut milk pulp, with orange juice, lemon juice, agave nectar and citrus zest. It was delicious and so light and crunchy. I will write down the recipe when I make them later. They had a real snap to them when you are them, totally unlike most raw cookies.
What recipe did you use?

It was from Chickadee:
Chai / Almond Milk Biscotti
Soak 2 Cups of Almonds overnight. Strain. Put in a blender with 4 Cups of Water. Add fresh ginger root, cardamom seeds, cinnamon, black pepper, raw honey, and blend high and long. Strain pulp and drink milk chai. Divine. Then, take the pulp and spread on to a teflex sheet and out comes almond biscotti.
So, if you have the pulp and it's just plain you could just add the above spices and viola!

Seems to me you would need a sweet binder, like dates or raisins...u know what i mean? then again i guess biscotti is supposed to be pretty dry...hmmm
