I made RP"s brownie recipe into a Birthday cake & frosted it with agave, coconut butter, cacao, coconut whizzed up & a dash of vanilla. Decorated it with coconut & walnuts...Came out great & was VERY easy! :)

Also, enclosed is the Brownie cake cut up into Holiday muffin wrappers, Almond Biscotti, (recipe is in Renee Underkoffler's) & Mysticat's ginger cookies.

Enjoy...Happy Holidays! :)

Here is a bit from my Rawesome Christmas, all raw, all day! :p There's cookies somewhat adapted from Mysticat's cookies. I didn't have the same ingredients so I used buckwhat meal and honey. Then there is Calzone, Alissa's recipe, really good! And last but not least, pizza with Calzone crust, this was the best! (My nephew aged 14 even quite liked the pizza! :D ) I hope you have and hve had a beautiful Christmas everyone!

My first ever raw 'creation'!!

It's a mandarin orange, green grape and apple soup! It's sooo good! It's actually a little like apple sauce, I didn't puree it long enough. The spiral thingies are part of the apple peels and then I cut a grape in half, for garnish. :p Don't mind the crappy quality, I took the picture on my camera phone. :p

Delicious raw cake!
The frosting was so creamy and good.
I made it up and It had:
Cashews
dried mango strips
Coconut milk
Honey

The cake was not dehydrated and was just a mix of oat flour, ground golden flaxseeds, raisins and carob. It would of been good as a carrot cake with the frosting by leaving out the carob and adding carrots and walnuts.

Fruit Burst Soup! It's my second soup creation. :p I just randomly through things in the food processor that I thought would be good!

1 whole pineapple (well, almost... I munched on some pieces)
A few raspberries
A few blackberries
1/2 banana

http://i132.photobucket.com/albums/q32/everclear2107/raw/fruitburstsoup.jpg

I used the other 1/2 of the banana for garnish! :)

It was yummy! Almost like a smoothie in a bowl, but still soupy too.

Happy New Year everyone!

We had a few goodies from Fred Patenaude's New Year's Day Mexican Menu tonight and WOW! It was fantastic! If it's a glimpse of what's awaiting us this year, it's going to be RAWSOME!

- Guacamole Supreme
- Where's the Beef?
- Sour Cream
- Refried Beans (which I tweaked a little...)

Served with Raw Guru's corn chips and my home-grown sprouts.

Here are my raw contributions to the Christmas meal with my family.

There's Alissa's Easy Apple Pie, which everyone in my family really liked. Then there's the pesto stuffed mushrooms, not dehydrated (no dehydrator at home), but they were still delish! Then there's my favorite: RP's brownies with some raw ice cream! The ice cream is made with bananas, almond butter, agave, vanilla and these are just approximations of the ingredients. :)

I've been trying to come up with a recipe for egg salad & this is pretty close.

Raw *Eggy* Sammy

1/2 cup cashews, 1 cup Macs, 2-3 cloves garlic, 2 TBSP Ume Plum Vinegar-NOT RAW-but the key to this recipe...IMO, 3 TBSP Lemon Juice, 1 tsp tumeric, 1/2 tsp salt-(optional) but I like anything *eggy* to have salt-1/4 cup water.

NOTE*I added the water a little at a time...

Mixed all up in Vita-Mix until smooth. Added diced onion & celery...& topped it on the Famous Russell James Bread with a side salad...YUMMY! :D
Enjoy,

Lana

Hey, my first ever picture post!

First pics are some cashew, coconut, lemon cookies with blackberry 'jam' filling (blackberry puree with agave nectar). I call them 'bleeding eye' cookies, they look so horrifying before they are dehydrated. The first two pics are before dehydration, the last after, with my son in the background.

The last photo is of a baby orange from our very own orange tree, growing away for our juicy delight.

I went to cafe gratitude in SF over break and I had the sample plate as well (we loved the curry soup!), the raw miso soup, the I am all that elixer (cuke juice, E3live) my favorite, the I am healthy juice (another fav). We had the banana split...the almond milk ice cream was to die for! My only complaint is that they didn't serve the coconut juice in the coconut itself. But yes I loved it!

Here is a pic of my kale-avo-****ake salad with grated daikon
And my kale-avo-dulse salad with my homemade nori crackers (nori with left over juiced fibers spread and seasoned with garlic, nama-shoyu, cayenne)

I love kale for the winter =)

OMG!! You all don't know HOW many times I've had to "slap my own hand" to keep from posting about all this delicious-looking food!! Jenna, I love your version of the "milk" ad! :D

So, in part, to keep up with the "beverage theme" (and one that isn't a beverage) I'd like to post a couple of pics:

StRAWberry Lemonade (recipe found here: www.eatlivingfood.com/recipes.htm) and "Oaty Flakes" (no actual recipe, but it's simply some "raw" oatmeal I made for a class that was left over and I spread it thinly on the teflex, dehydrated, flipped and dried until crisp...break up and eat with nut milk - this one served with cashew-almond milk) This cereal reminded me so much of Wheaties, which I loved!

Wow Petals! Your cinnamon rolls look GREAT! :)

Well, today I did my first Living on Live Food Level TWO Certification and it was a huge hit! We had the greatest time making the food! I'm posting what we made today (the calzone and finished pizza and cinnamon rolls to be pictured tomorrow)

We made: Alissa's enchilada, pizza (used the calzone dough for the crust - toppings are orange and green bell peppers, red onions and raw black olives), chili, onion dip, rye bagels, the calzone (not pictured yet - will add tomorrow when done), flax crackers (not shown), and as a special treat cinnamon rolls (no nutty filling this time):

Chili w/onion dip (SUPER YUMMY!)...

Rawkinloc, everything just looks fabulous! Gotta try the calzone (I usually eat it as pizza) and your cinnamon buns!

Just got back yesterday from Calgary where I taught an informal raw class to Sandy and her daughter Jaime. We had an incredible time! Everything went so smooth and the food was beyond fabulous. What's more, we took tons of pics! Here are a few of the beautiful dishes we prepared. I'll be posting lots more with recipes and a detailed account of our uncooking adventure on my blog soon. Here goes...

Appetizer for him: Alissa's olive tapenade (on sprouted bread - he's being weened) Sorry the pic is so blurry. Argh.

Dinner: stuffed red, green, and yellow peppers. (soaked walnut, rehydrated tomatoes, onion, jalapeno, fresh parsley and basil, oregano, garlic, and some non-dehydrated nacho cheese - alissa's). Served warm from the dehydrator.

Always certain to leave me drooling and full of ideas! Those sandwiches look sooooooo good! I've just run out of onion bread so it's next on my 'to make' list.

Okay. Here are a few of the yummy dishes I've prepared lately...

- Carrot and Parsnip Pasta with Cilantro Pesto, and topped with stir-dried oyster mushies and broccoli.

- We finally took the plunge and gave these a try! Portobello burgers stuffed with guac. Yummo!

- Zucchini Roll-ups from the Holiday Celebration ebook, getting ready for the dehydrator. So nice and chubby! Mmmmmmmm! BTW, I just put the recipe up on my blog (Nomi and Sheryl gave me their OK! Yay!)

- Savory Nori Snacks from Raw Pleasure Australia's free ebook. One of our favorites!

- Oh, and I almost forgot: Carob and banana crepes, with a fresh young coconut and mac filling, topped with persimmon sauce. Heavenly!

I had guests for dinner over the weekend, in addition to my nephew staying for two days. I made Alissa's Fettucini Alfredo, with some chopped red pepper and green peas. I called it "Summer Squash with Creamy Nut Sauce" because my nephew said it sounded much more elegant that way. :) Also, he said, "It's not fettucini alfredo, but it's very good in its own right. Don't pretend it's something it's not, just have the courage to call it what it is!" He ate two helpings, along with spinach salad with a creamy raspberry vinegarette dressing I created. For dessert I made Alissa's blueberry pie, which he couldn't stop eating...until he'd had three full pieces. He was impressed and thought it all delicious. He said, "When you told me it was going to be raw, all I could imagine was carrot and celery sticks." He is about to begin Med school and I challenged him to study nutrition on his own because he will be a much better doctor if he understands nutrition instead of just drugs. Anyway, this was my other creation that I served to dinner guests tonight. Chocolate-raspberry Pie...they loved it and didn't even know it was raw and didn't care when I told them! :D

rawyogi80,
Wow! Great job on your nori rolls platter. Raw artwork at its best!

Coonlie,
Your pie looks fabulous! No wonder it was such a hit at your dinner party!

We had Indian food the other nite... Diana Stoevelaar's samosas (with a fresh coconut base wrap), cauliflower and parsnip rice with peas, left-over samosa filling, stir-dried curry broccoli and beet greens and Richard Salome's fantastic Curry Sauce. Yummo!

Yesterday was Cracker-making Day! I like to make a whole wack at once... This morning, I had a hard time putting them away as The Puss suddenly decided she was in LOOOOOOOOVE with my crackers! :D he he I litterally had to fight her off the counter! I gotta say I take it as a real compliment coming from her as she's usually quite picky...

Baechu-Poghi Kimchi

I lived in Korea thanks to my Dear Ol' Uncle Sam.

I love Asian food "heck I just love food!"
I had to know how they made the stuff I was eating, I ended up networking with the korean Army wives, Civilian Contractors, and with the ladies who did laundry on the base ( they always brought me OI my absolute favorite kimchi) among other things. I made them recipes from my culture.

The OI

My supplier only had two regular cukes I use those in juice , so I got the small gourmet ones

OI KimchiMy Raw version

2 Cucumbers ( today I used 4 gourmet seedless)
Herbamare ( to taste)
1 sheet Grounded Raw Nori (as a seasoning)
I large Thinly Sliced carrots ( I used a peeler)
5 Garlic cloves (I do both crushed and sliced)
2 tblsp Chives
Tsp minced Ginger
4 Green onions/Scallions sliced
Crushed Red pepper ( to taste)
water

Thinly slice cucumbers & spread on plate, I sprinkled a small amount of sea salt or herbamare and let sit for an hour.

Lightly rinse
Place all ingredients in a large Mason jar or container ( I find it taste better, and does not leave a residual odor in glass) fill to top with water. wait at least an hour or two before you eat it so it cures, If you can shake it during that sitting time & before you serve. Last about a week in the fridge ( unless you like it like I do then it's gone in a day)

Baechu-Poghi Kimchi
(saved on my computer from my beloved Korean Friend JJ, I did modify it noted in red)

1 Head Napa cabbage
1 Head Bok ChoySea Salt / Herbamare ( to taste)5 to 6 ounces Diakon Radish
red pepper flakes (to Taste)
2 teaspoons finely minced ginger root
2 cups onions ( I liquify them as much as possible)
10 cloves( crushed )garlic

Instructions:
Cut the cabbage Cross way. Dissolve some seasalt in 4 cups of water in a wide and shallow basin or bowl ( salt bath). Do not shake out all the salt water. Place the soaked cabbage in a gallon-size container with large opening, Place something on top of the cabbage to act as weights. (I have a large enamelware bowl that I place the cabbage in and a colander that fits inside the bowl weighted & held in place by a plate) I hope that was clear

Let sit 4 hours with weights in place. Turn over and pickle for 4 more hours. Slice the radish and combine it with the rest of your ingredients in a large mixing bowl. Mix together using your hands. Pack the kimchi tightly in the gallon container. Cover the surface with plastic wrap, pressing down to get rid of all air pockets. Cover the jar.

This is where I deviate from original, I place my kimchi in the fridge to ferment.
She keeps it in the pantry:
Store at no more than 70 degrees for 48 hours to ferment.

I try to use it up in a week, you can reduce the recipe

Mandu
is like a wonton, pot sticker

1 crushed water chestnuts (you can get fresh @ International mkts or vendors, Health food stores etc)
2 cruched garlic
3 Nama shoyu
4 Nut Cheese or your choice ( I add sesame)
5 Raw nori crumbled
6 Spinach leaves

mix 1-5 to make pate like
spread on spincah leaf , fold leaf from top to stem edge to get the d shape

Hope that helps

This is Alissa's onion dip served with baby carrots, celery sticks, two varieties of flax crackers and seasoned/dehydrated zucchini chips.

I also wanted to use this post to remind everyone to PLEASE refrain from posting comments in this thread - if you read the first initial post, you will see that it is designed for photos (with or without recipes) only - no comments, please, unless of course you are posting a photo of your food creations.

Thanks! :)

OMG! I just had a HUGE dinner and still you make me drool all over the place!

You all absolutely RACK!

Eilene,
Your almond bread sandwich and pizza look out of this world! I'm so glad you're enjoying the cheese. I also use it pretty much every time I make pizza too... At least I know now it's not just me!LOL

Here are my latest uncooking experiments...

I made two kinds of pizza crusts:
- Alissa's fabulous Pizza Bread
- My Barley Crusts

Here's my latest pizz-art: Cashew and Macs Mozzarella Cheese, Tomato Sauce, Sundried Olives and Red Peppers on Pizza Bread. After dehydrating for a couple of hours and just before serving, I added chunks of avocado and pineapple. Yummy!

(BTW, I just put up a post on Raw Pizza at The Sunny Raw Kitchen...)

And I FINALLY got the guts to try the Calzone. It went really smooth, all and all, and the result was fantastic!

It was THE best Valentine dinner ever! Calzone (topped with a little tomato sauce), Salad with Sandy's Grapefruit Dressing and homemade Sauerkraut.

For dessert, Maraw's Date Truffles with fresh coconut whipped cream (which I'm just about to serve...) OMG! I think I've died and gone to Heaven! :p

This is exciting. I have been drooling over everyone's creations, and now I get to share!

Lava brownie stuffed with Naked Chocolate's dark chocolate sauce, Carmella's pad thai (soooo good) and Alissa's pizza.

I left the pizza recipe on the table this morning and asked my bf if he would make it. To my surprise, he did! And it was too good for words.
