Okay, I tried this last night. WTH? I guess it tastes different after you dehydrate it. But, I know that it wont taste like the sad version, But it was the strangest thing, It smelled like garlic, yet tasted like a sweet frosting, yet was supposed to be cheese? Yuck. All I could taste was the sweet orange... nothing else. Please tell me thats not the cheese you put on the raw pizza? I still have yet to try that.

I had to modify mine. I use only one or two cloves of garlic (depending on the size) and add a ton of hot peppers. I don't like it without the hot peppers. And while it doesn't taste exactly like the SAD version, it's good enough that my entire family ate it and liked it. It's very rich though. I can only eat a tiny bit at a time.

I love garlic. That wasnt the problem. BUT WHOAAA. I just saw a post from RawkinLocs of her Nacho cheese, and it didn't look like mine at all? Her's was alot smoother, and yellow, mine looked like salmon? I followed the recipe to a t? I dont get it? Did I put too much orange in it? It says 1 orange?
Ugh.. LOL

Mine comes out pretty smooth and an orange/yellow depending on what color of pepper I put in. I usually use a red pepper. Once I was out and used a green pepper. The end result was not appealing to the eye. I usually use a small orange. The last few times I made it I used some kind of orange imported from Australia because I couldn't find any others that were good.

I cut back on the garlic because I hate garlic. But when I eliminated it totally, it didn't taste right. When I make it for others, I put the garlic in because they seem to like it.

Davylp25- I think Rawkinlocs did not dehydrate the cheese. You can do either it dehydrated or as a dip-undehydrated.

PS> I use 1/2 macs & 1/2 cashews when doing the nacho cheese as it lessens the sweetness IMO.

Yeah, that's the recipe I use...not on the pizza (that's the cheddar) but this is the one I made for nachos. We also made it at the September training in Maine and stuffed green peppers with it. I was using it to dip flax crackers in...it was good!

But it's like I always say, you won't like everything you try! Some stuff you'll love (such as you loved the stuffed mushrooms) and some things you won't and that's fine too.

Also, I get mine smooth by blending in the Vitamix instead of the food processor. If you want a thick dip, the FP is fine...but if you want a smoother, saucier cheeze, then use the blender. And, try adding some jalapeno to it and give it a day in the fridge to allow the flavors to meld. Sometimes I find my raw cheezes taste better the next day...I just take out of the fridge and warm in the dehydrator or re-blend in the blender if I don't want it cold.

You can also add a little salt if need be. I just learned to play around with recipes and tweak to my liking...I notice many here cannot do that and need to follow recipes exactly to the letter.

One other suggestion...if you have some raw crackers on hand...take some of the cheeze and spread it on the crackers and then dehydrate for anywhere from an hour to overnight...it's really good...to ME, tastes like the cheese & crackers I used to eat!

So what if one just omitted the orange? Would that ruin it? No orange no sweeteness? Cuz thats all I could taste

I taste a lot of recipes while progressing & then add things I think it is missing. Many cheese recipes call for lemon-so maybe you would like that better.

Also-the red pepper can make it sweet as well.

I love lemon,,, so then try lemon pieces instead of orange pieces?
