Created this today and I really like it! I'm thinking about trying one of the nut cheeses and adding a little carrot juice or calendula tea to it for an egg-like appearence and to increase the protein.

Un-Fried Rice

1/2 cauliflower head chopped well [rice size]
4-5T unhulled brown sesame seeds
2T Braggs or Nama Shoyu [to taste]
heaping spoonful of almond butter
1T dried ginger or garlic

Chop cauliflower and mix in sesame seeds by hand. Mix other ingredients seperately then add to cauliflower mix. Optional ingredients: diced carrots, bit of green onion and sno peas. Also good as rice in sushi [I used avo, cuke, carrot and the "rice"]. Yum!

I've been following the forum for a few weeks. Thank you to all who participate, I don't think I've ever encountered a more supportive and sincere bunch of people. :p I think I've passed my 30 day RAW mark, but I'm not counting yet. I don't want to give myself credit until I give up smoking [this month!]. I didn't think it would be a good idea to quit smoking AND diet coke [4/ day], espresso [6/ day], chocolate [Hershey's/day], and dairy all at once. My initial detox was bad enough! :eek:

Yikes!! :eek: You had some real habits going there, girl! Was the Diet Coke to counteract the caffeine in the espresso and chocolate? hee hee Reminds me of when I was mainlining coffee and dark chocolate. :o


Aargh! Just reread the recipe. Didn't see the Nama Shoyu the first time. I'm trying to go really raw and eliminate these non-raw things even though such a small amount is used. Ah well, maybe I'll just use up what I have and then just not replace it. So ... I'll make it tomorrow after all.

I will definitely try this, I miss fried rice and have been having the blues after giving up bulghar wheat (for now). Thanks alot. I will probably do the cauliflower and sesame seed thing and mix in my own other ingredients. It seems like the cauliflower and sesame seeds are the base. It sounds delicious. Thanks again!!

RawTruth, thank you for the welcome. :) I have always loved chocolate, thank goodness for raw cacao nibs! I started drinking lots of coffee when I got sober almost 12 years ago, then I drank dt coke to cut down on the amount of espresso... Having given up all my lesser evils for 30 days gives me hope that I can kick nicotine for good.

If you don't use the nama shoyu you could consider a thai peanut sauce [nut butter, coconut/ coconut milk, chili powder, dash of honey, squeeze of lime, hint of celtic sea salt].

Todd, I'm on the hunt for an easy [sprouted/ soaked] grain staple as well. Please do post if you find a satisfactory replacement for your bulghar. I tried the recipe before without the nut butter but it was too wet and tasted like sesame cauliflower :) . I only added enough nut butter to mellow the taste and make it a bit more like sticky rice. Not enough to roll up cauliflower balls, for example. Tahini would make an interesting substitute...

Hi Christa,

Thanks for explaining that.....it makes alot of sense. I will play around with it. I would love to add the almond butter but we make it from scratch and it takes alot of time. I may just add some tahini but I will play around with it. About the bulgar subsitute, I tried some soaked wheat berries (2 days) on my kids after I seasoned it and they loved it. I may have at least one option there, but I am still searching. Thanks again. When this fast is done I will definitely be trying this.

OMG, I just made this and it's wonderful!!!

I used PixieGreen's recipe below with slight modifications as noted here...

1 small cauliflower head chopped well [rice size]
4-5T unhulled brown sesame seeds
2T Braggs
heaping spoonful of almond butter
1T garlic

Then I added about half a chopped carrot and about a cup of peas and 4 scallions.

This not only looks almost identical to its cooked counterpart, it is also one of the VERY few recipes I've tried that tastes almost the same, too. The main difference between this and SAD fried rice is that this is a bit crunchy and not hot.

Oh yeah, and you can't even taste the almond butter (I can't anyhow) but I see the need to add it--good call PixieGreen!

Seriously folks, give this a try!!!

Can you elaborate just a little on how you chopped the cauliflower? I was less than satisfied with my result. Did you use just the cauliflower tops or did you use the little stems (that a slightly green) also? I couldn't get mine rice-size; either they were teensy little crumbs or bigger slice/pieces. I really want to try this again because it was almost there. Any hints?

I used my tupperware chopper, like the one in Alissa's dvd. It's easier to control the texture of ingredients than using a food processor. Not to say it can't be done, but I haven't tried.

I just cut off the green leafy part and threw the chunks in the food processor and put it on low. My pieces are technically smaller than rice size, but not so small that they're a mess of crumbs. Sorry, no hints, it just happened.

Also, I was just reading the Bragg's/Nama Shoyu thread and it got me to thinking about this. Normally when I eat fried rice, I don't put soy sauce on it, but instead will often mix in a bit of sweet and sour sauce. Does anyone have a raw recipe for a sweet and sour sauce?? I don't know what's in it. That might be a good alternative to Braggs. Of course, it would be a totally different flavor...

I just made this for dinner using tahini instead of almond butter, and didn't put braggs or nama shoyu, just some salt. Also hulled sesame seeds (didn't have unhulled - so perhaps the sesame seeds bit wasn't Raw...?) I added diced carrot, purple cabbage, red pepper & shallots.

It was delicious :D - served on a bed of salad greens & garnished with avocado slices...

My dinner took 5 mins to make and DH's has taken all night...(he's cooking himself so that's fine by me... ;) )

This was also really delish when I mixed in some zucchini humus...Like eating zucchini humus with vegetable sticks that have already been broken down for you!

Thank you so much for sharing this recipe... yum! I just finished an entire bowl of it... also I added chopped carrot and 1 cup of peas as Kelly suggested and some chopped onion too. The next time I will get some bean sprouts as that would be a good addition too.

I have been craving rice and discovered this thread. I took part of a head of cauliflower (about 2 cups) and put it through the food processor, and then added a couple of celery stalks, leaves and all, and a tiny dab (1 tsp approx) of organic raw tahini. I put it into the bowl and topped it with a squeeze of lemon juice.

The texture is smaller than rice... more like couscous (which I also loved!) and tastes really well. I don't season my food very heavily, but I really enjoy this!

rawandnatural, if you use the shredder blade in the processor the result is more like rice IMO. I had some yesterday with marinated mushrooms and veggies. It was reeeeal good.

Your recipe sounds great - I do something similar but never w/ the unhulled sesame seeds! cool, I'll try that- thanks! oh yeah, sorry if I missed it, but is it best to soak/sprout the unhulled seeds?
btw, I've heard of parsnips being used as rice- but have not been able to find any yet! anyway, thanks again for the recipe.

NoGMO, I've see recipes for raw "rice" w/ parsnips, too. In fact, I found some fresh grape leaves and pickled them so I could make raw dolmas with parsnips, just haven't gotten around to it. I think parsnips are a fall/ winter veggie so you may not see them for a few months.

I don't soak/ sprout my sesame seeds. It may be "best" to do so, but I like the way they taste au natural. ;) If you soak them it shouldn't take too long, they are so tiny.

Doe, thank you for the tip! :) I had just used my mini-cuisinart which just has the blade, but my larger food processor has the different shredder attachments to it, so I will use that. Thanks!

Okay, I just made this today and it IS very good! As was mentioned it's not a DEAD/dead ringer but it's very close and very good!


I added some carrots and for a special little treat, I broke up some of the eggplant "bacon" I had into little pieces and added that in...MMMM...nice added touch!

I haven't tried this so am just guessing

Sweet and sour is usually a pineapple sugar vinegar mix, so

pineapple and apple cider vinegar and some dates in a food processor, I have that all at home, I will give it a go for you. Even have some cauliflower, hmm I feel dinner coming on.

I'm finally getting around to trying this - and I did it wrong, added sunflower seeds instead of sesame seeds (I simply read it wrong!) and I added some tahini , too.

It's pretty good!!

Wow, this looks amazing! I'll have to get some seseme seeds to try it, I've been craving chinese food...and that sweet and sour sauce recipe was just what I needed! YEY!

I also make a version of this using part parsnip and cauliflower and sometimes just all parsnip. I find it has a more mild flavor than cauliflower and I really enjoy it. Great for making nori rolls too. Here is a picture of the parsnip rice, looks plain but you can do so many things with it!
