View Full Version : Chili Conqueso Dip- YUMMMMMMYYYY

OK- I have been working on the perfect Chili Conqueso Dip & I think I finally have the perfect recipe.

From Alissa's book- 1-batch of the sour cream recipe- I used a tad less water.

1 1/2 or so cups of the dehydrated & FROZEN nacho cheese. I think using it frozen gives this dip the chunkiness that is in the SAD variety.

I made the sour cream in my vita-mix.

Place sour cream in Food Processor-add the frozen slices of nacho cheese & pulse chop. I would only pulse chop as you really want to keep this chunky. You can stop here-or I added the following...

Minced red onion-about 1/3 cup (I minced a bunch up in my FP earlier as I was making salsa).

1-jalapena-de-seeded & finely chopped(be careful & wash your hands after handling) :eek:

Dash of salt...

Serve & enjoy with everything, veggies, corn chips, flax crackers...

This is extremely rich-not for everyday-but great for parties & Holidays. No one would EVER guess that this is not a SAD cheese.

Beautiful idea!! I love it how different recipes combine together. Even making something with the blender from the previous recipe (like in my raspberry cheesecake!). Just amazing!!

Yes- How fun it is to experiment-esp. making things that were in our former SAD life even better-RAW ! :)

For those who do not have Alissa's book- & I HIGHLY recommend for the 1000th time that you get both book/DVD combo...anyways...I just found this thread that had the nacho cheese recipe posted-

Just a note...I use 1/2 mac nuts & 1/2 cashews when I make the nacho cheese.

That sounds delicious!!! During my SAD days I could lick that stuff off the walls!! (as RP always says about Bragg's :p :) )

I definitely need to give this a go!

Jenna- I hear ya about licking Conqueso off the walls. LOL..This Raw version tastes better than the SAD.

I finally received Alissa's book in the mail TODAY!!! Yay! It's Christmas for us already! :D I've been hearing about how great it is for sooooooooo long (how can you not, hanging around this board!?!), now I can make all those recipes you've had me drooling over for months!

OK, back on topic...
I'll probably cut wayyyyyyy down on the jalapeno when making your recipe though, as we're not used to really hot food.

"conqueso" or con queso means "with cheese" in Spanish. :)

Carmella, Glad to hear you received Alissa's book. You will LOVE this book. tons of recipes.

Chili conqueso dip is a cheese dip-usually found in delis that was loaded with SAD cheese, sour cream,spices & tons of sat. fat-but very addicting-for me at least. I searched high & low for a substitute & this recipe has done the trick.

It is extremely rich, but great for the Holidays. :p

Is this like the cheesy/salsa dip you get in the jar.....I love that stuff and was always wanting a RAW version. I'm definitely making this...and some crispy corn chips!! YUMMO....guacamole, refried beans, and conqueso!!! I'm in heaven!!

Wendi- It's even better than the stuff you get in the jar! LOL :D I used to buy it at the Deli-so I have been messing around w/recipes for 2 years to get this right. I love it!

OK- It is really heavy on the fat-but I always have fresh veggies to eat w/it besides flax crackers or chips.

Let me know what you think of the recipe?

PS.. I have even thought it may need some really finey diced tomatoe & maybe a tad of onion as well...It's fun to play with these recipes... ;)
