Does anyone have recipes for Spinach Dip?

I would make a beautiful and simple cashew cream (cashews/macadamia nuts, lemon and salt), then stir through it some finely chopped spinach and some grated cucumber. You might even throw in some of your favorite green herb for seasoning. The cucumber will lighten it up a little for you. It won't really be that noticeable. It will also weep just a little water and make everything nice and soft if you leave it in the fridge for a couple of hours.

There is one in Alissa's book that is delicious. I mix a little cashew cheese in it for spinach cheese dip with veggies.

- 4 cups baby spinach
- 1 avocado
- lime or lemon juice to taste
- sea salt, miso, bragg's, dulse or other salty seasoning if desired

Combine and blend until creamy.
I use nori sheets crumbled-up instead of salt, and I use more like 6 cups of spinach. I also like it with lime better than lemon. Adapt it as you like.

other optional ingredients:

sundried tomatoes
garlic
ginger
scallions
nutritional yeast
ume plum vinegar
cayenne pepper
celery or cucumber (will blend up)

Serve in wraps, nori rolls, with crudites, or eat as is.

oh, and also yummy on raw breads and flaxseed crackers.
