I haven't tried this recipe yet, but I'm planning on trying it tomorrow or the next day (using buckwheat instead of kamut). A friend made it for a raw potluck, and it was so delish!

Valya's Raw Bread (from 12 steps to raw foods, eating without heating)

1 cup ground flaxseeds
1 cup kamut sprouted for 1 day
1 cup walnuts soaked overnight
1 cup chopped celery
2 teaspoons caraway seeds soaked overnight
2 tablespoons coriander
1 big onion
1/2 cup water
1/2 cup olive oil
1/2 cup raisins
Juice of half a lemon
1 teaspoon salt

Blend soaked walnuts, kamut and onion in the food processor until finely chopped, transfer to a bowl and mix with the ground flaxseeds. Netxt blend celery, olive oil, raisins,m and water in a blender. Bombine both mixtures. Add the salt, coriander, lemon juice, and caraway and mix thoroughly. Shape the mixture into small loafs and place on a teflex dehydrator tray, make sure to decorate your loafs with crushed nuts or poppy seed. Place in the dehydrator at100 degrees, for about 24-36 hours. You may need to flip the bread after approximately 12-15 hours so that both sides dry evenly. Makes 5-7 loafs.

OH...MY...GOD!!!!

I'm so excited! Its not even out of the dehydrator yet, and I'm soooooo happy!!! Why?

I'm originally from a northern NJ town with a large Jewish population. Hence, we have outrageously good bagels. This town also has a large Russian immigrant population. While I was in high school, this one bagel store came up with "The Black Russian" which is pumpkernickel rye with onion and caraway seed, topped with sesame seeds. Well, the Black Russian was my favorite favorite favorite bagel!!! Having been raw for over a year now, no Black Russians for me...

Until now!!! This tastes like the black russian. Its got onions and caraway seeds in the dough! Its not dehydrated yet, but it still reminds me sooooo much of my favorite bagel. I got so excited, I topped the loaves with sesame seeds for an "authentic" black russian loaf!

AHHHHHHHHHHHHH!!!!!!!!! I want to call everyone I know and tell them all about my raw "black russians!" :D

(Oh, by the way, I used buckwheat instead of kamut in the dough, for anyone wanting to duplicate this experience. I also doubled the recipe (except for the onion and coriander).

Well, if it's that good, we'll have to try it. Did you make loaves, as opposed to flat bread? I haven't had good success with loaves. I have made bagels before that turned out nicely, though.

I made small, roundish loaves....kinda like a bagel without the hole, but a little thinner.

I wish I'd made them thinner so they will be ready sooner, though.

The house smells wonderful!
