Last nite i came up with this recipe for a veggie dip to take to a christmas party. Everyone loved it and every last drop of dip and veggies were eaten. They thought it was sour cream onion dip! hehe, i didnt tell them it was raw.

Anyway, wanted to share the recipe

-3/4 cup cashews
-1 avocado
-juice of 1 large lemon
-1 large clove garlic
- few tbs water
- approx 2 inch cube of peeled cucumber
- 4 sundried tomatoes (i used the ones in oil and washed off the oil) - Minced
- 1/2 tsp finely grated white onion

Puree everything together EXCEPT the sundried tomato. Add that in at the end.

Oh, thanks for sharing that - and it looks beautiful surrounded by those raw veggies! Now I know what to take to my sister's on Christmas!

Is there a cashew substitute?
