I have a ton of sprouted lentils from making Alissa's chickun fingers. I am going to make another batch but I'll have extra. Any recipe ideas??? Pretty please???? ;)

2 cups sprouted lentils or sprouted peas
a smallish onion
1 cup walnuts
a pinch of nutmeg
celtic salt to taste if you use it - maybe 1/2 teaspoon
2T lemon juice
This will sound weird....I use a couple or three drops of stevia because I like just a slight sweet taste to it, like chopped liver used to have.
Blend, or better yet, food process. Tasty, filling, great.
I think I dehydrated it once too, and that was fun.

It is definately not like the vegetarian chicken fingers I feed my kids but I liked them just the same. The texture was yummy. The first batch was very salty so i cut back on it and on the curry. I also let the mix sit in the fridge overnight and it seemed to hold together better. I definately reccomend it but do not expect the same as the real thing, funny thing is, I do not want the real thing!!!!! I am trying to come up with a raw ketchup recipe, though.

I have a raw ketchup recipe that is pretty good ..
1 cup sun dried tomatoes ... ground into powder
1 Tbl lemon juice
2 tomatoes, chopped
1 pitted date
3/4 tsp celtic salt
dash pepper
Combine all incredients until smooth.

what kind of lentils did you use?
I can't find whole red lentils in the shops, only split ones.
Is it ok to use green or brown?
