I don't really like raw zuccini pasta. I think I want to make something dehydrated. I also have red peppers and nuts. Any ideas?

Here is a list of foods I have right now, want to make something yammy.
Want to use because they won't last:
Zuccini
red peppers
celery
spinach
Also have:
Almonds, hazelnuts, pumpkin seeds, sunflower seeds, flax seed golden & brown, cashues.
Also have lots of apples that are starting to be soft, are they bad, or are they still ok to use? What can I make that requires lots of apples?

with the zuccini can you make a lasagna with a nut layer in between.
you could shred the zuccini and mix in some spinach with some herbs and then layer it with a nut cheese layer and a pepper layer????
you could use the zuccini to stuff the peppers with adding in the other things too?
you could use the zuccini in the chilli recipe on this board maybe, that also uses celery?
stuffed zuccini boats????
i am sure others will have much better ideas

I've never cared much for zucchini... that is, until I discovered a hummus recipe from the book RAWvolution by Matt Amsden. It is AWEsome! I don't have it with me, but the basic ingredients are zucchini, tahini, lemon juice, garlic, cumin, salt.

Hi there, I don't know if Alissa's got more than one apple pie recipes, but the following was posted in the Raw Pleasure Australia ebok so I assume she gave her permission. Here goes:
Alissa Cohen’s Easy Apple Pie
An all-American favourite, raw style! And it’s a lot easier to make than the “traditional” version!
Crust:
2 cups sunflower seeds
1 cup raisins (soaked)
½ apple
Filling:
6 apples
8 dates (pitted and soaked)
½ cup currants or raisins
½ lemon juiced
1 teaspoon cinnamon
Blend crust ingredients in a food processor and form into a pie pan
In a food processor, blend 2 apples with the dates until smooth
Pour into a bowl and set aside
In a food processor, pulse chop 4 apples into tiny pieces
Remove from food processor and place in a bowl with the dates
To the date mixture, add the cinnamon, lemon and currants and mix well
Pour filling into pie crust and let stand for at least one hour

I ended up making cashew chesse dip:
half red pepper, 1 zuccini, 1 celery stick, cashews, lemon juice.
Blended in all in the Vitamix untill smooth. Then I made some zuccini chips by cutting zuccini into small slices.
This cheese tastes so amazing, I think it is going to be my new favourite dish!
Just like real cheese dip! I am also dehydrating some of this mixture to make hard cheese.

I make a stir dry. I marinate some chopped zucchini, and any other veggies
in nama shoya or braggs with some chopped /powdered ginger, little agave.
Makes an oriental type sauce.
place in dehydrator for about 20 minutes or more to warm. Great on shredded lettuce, spinach, etc.
I would add the nuts on top for a crispy crunch. :p
I have never found that zucchini hummus worked for me. I find zuch. pasta too wet-so I'm sticking to stir drying my zuchs....

Can you find a raw zuccini bread recipe or take a raw bread recipe and change zuccini for one of the veggies?

if you peel and grate the zucchini you can then shmoosh the grated part all together into the dehydrator pan and dehydrate it slightly for a pizza crust...and then top it with shmooshed tomato as a sauce, peppers, mushrooms, whatever else you like on pizza and dehydrate it a bit more to warm it all up.
it wont come out as a pizza you can eat with your hands, but with a fork and knife its really good.

This sounds so good! I've used zucchini as a base for pizza just sliced thinly but I think this would be even better. Thanks!

I have never tried zucchini bread recipes, but the fun thing about Raw is that you can take a recipe & experiment. You can keep testing the batter until it is good -then dehydrate.
A word of caution-when tasting, always use a clean spoon- fork to avoid contamination.

The hard cheese turned out ok, good but not amazing. I think it tastes the best as a cheese dip. I tried making it without the zuccini, but it does not quite work, it's too ruuny that way, so keep the zuccini in. Let me know if you like it.

I don't like the zucchini spaghetti, it's too wet, and tastes of zucchini still, but I love Juliano's pasta marinara - in that the zucchini is sliced into thin strips with a vegetable peeler. There's also the matthew kenney lasagne

I don't like the zucchini spaghetti, it's too wet...
What I do with the zucchini is I shred it in the food processor then add a bit of salt and let it sit as I prepare the rest of my meal (pasta dish). After a few minutes I take a handfull of the zucchini and squeeze the liquid out over the sink and put in a bowl. I then fluff it up a bit to unclump it and add marinara sauce or pesto and some mock meat-balls. I learned this from the book Raw Food Made Easy by Jennifer Cornbleet. She has a recipe for "Mock Rice Pilaf" which is basically just shredded zucchini with the moisture squeezed out. The other thing I like about this is you can shred the whole zucchini, you don't have to cut out the seeds.
