View Full Version : Best Pumpkin Pie recipe- soo yum

I got this from a book that I had borrowed, it is from the "Uncooking with Jamey and Kim" but I changed the crust type from almond to walnut. Modified slightly. This recipe is even better the next day!

Crust:
2 C. almonds (preferably soaked and dehydrated)
1/3 C. dates (remove pits)
Mix all ingredients in food processor. Add a little water if necessary to mix. Form into crust in pie plate. (I used Vitamix instead of processor)

Pie filling:
2 C. shredded pumpkin or butternut squash -no need to peel

1 C. dates
1/2 C. almonds (soaked at least 8 hrs.,then peeled), or sunflower seeds. (I used the almonds)
2 t. cinnamon
1 t. ginger (ground is fine)
1/2 t. ground cloves
1/2 t. nutmeg
1/4 C. water

Mix shredded pumpkin and water in food processor (using regular blade) for several minutes. I used my vitamix.
Add other ingredients, and mix until well mixed.
Dump into the pie crust.
Other ideas: Pie filling can be eaten like pudding, or dehydrated into thin pumpkin leathers.
