I had found a sale on persimmons but now they are getting very overripe, i saw the pictures of your "Persimmon Sorbet with Coconut Creme and Lemon Sauce".
It looked so good, could you please share the recipe, i'd hate to lose all those persimmons. I couldn't help myself they were so cheap, on the sale rack.

I feel uncomforable sharing the recipe over the web, since they are copyrighted and all. I made that mistake once, and I certainly don't desire to take away someones book selling profits by freely distributing their recipes all over the web. :o O dear!

I know the feeling about not being able to NOT buy persimmons. We've got tons of them...We've really been stocking up this year as they are so delish and are available for such a short time!

What we've found, in our experience, is that persimmons may look overripe but the flesh won't be off. Or at least, it won't taste like it is. It will only be sweeter....Mmmmmmmm!

Have you seen my pict of Don's dessert on the Pict. only thread? Super simple but so delish! Here goes:

Scoop out the flesh of one or two persimmons in a bowl. Then some of your favorite banana ice cream. And top it all up with a macadamia/cashew,date and a little vanilla whipped cream. Ahhhhhhhhh, bliss!
