Im not fairygirl (I hope she doesn't mind) here you go anyway :D
Pumpkin Pie
Special equipment: high speed blender and food processor
Crust:
2 cups almonds (soaked then dehydrated to crisp)
1 cup dates (pitted, and un-soaked)
dash Celtic Sea salt
Pie filling:
2 cups cashews (soaked)
1 cup medjool dates (pitted and soaked)(save water)
2 tsp. vanilla extract
1 1/2 cups pumpkin (softened--see below)
2 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/2 tsp cloves
1 tsp ginger (grated) optional
To soften pumpkin, grate the pumpkin, and toss with a bit of olive oil, place
on a teflex sheet in the dehydrator, and dehydrate until soft, (this is to
soften only, not to dry, that is why you toss with the olive oil) this will take
about 1 hour to soften the pumpkin.
Place all crust ingredients in a food processor, and blend until chunky, but
will hold together.
Form into a crust in a pie pan.
Place all pe filling ingredients in a high speed blender and blend until
smooth, adding date soak water to keep it moving.
Pour the pumpkin pie filling onto the crust, and chill.
Serve with Whipped cream recipe to follow[SIZE=3]

I call it my pumpkin pie but i actually used sweet potato :)
Crust:
almonds, soaked
dates
yellow raisins
dash cinnamon
Process and press into pie plate. Dehydrate as much as you want.
Filling:
2 medium sweet potatoes
approx 1/2 cup pure maple syrup (u can use agave)
handful dates (pitted)
1/4 cup ground flax seeds
1 tsp cinnamon
1/4 tsp finely grated ginger
Peel and Chop sweet potatoes into chunks.
Blend in food processor until there are small bits. Then add the dates, maple syrup and continue to process until smooth.
Add the rest of ingredients. Make sure filling is smooth.
Pour into pie crust and chill until firm (i found the freezer worked best for this).
This pie is nice and light which i like. Top with a raw whipped cream and DIG IN :D

Fairygirl, your pie looked SO good in that picture...I was staring at it for the longest time! I mean, one would never look at that and think it was a raw pie.

I tried making the recipe but the crust didn't turn out so well. Kind of soggy. What's the ratio of the crust ingredients? I know you are a chef and can kind of eye things but I so want to make it. However, even though the recipe didn't even look remotely like a pie (not even close), it does taste good!! The sweet potatoes even remind me of apple- I think the maply syrup helped that. I didn't even add all the maple syrup either.

Thank you for both recipes, I've got some butternut squash so I might use it for a try. I hope it turns out okay, has anyone used this type of squash raw in a pie? Thanks!

I'm back! I made your filling recipe fairygirl, using the butternut squash I had. I juiced it (Champion) and used the pulp with a bit of the juice and maple syrup, cinnamon, flax, and dates. It smells really good!
Then I already had some of RP's brownies in the freezer so I am using that as a crust and think I will dehydrate it for a few hours and see how it turns out. I'll report back!

ooh, glad u made it.
Salsababy- how long did u dehydrate the crust? i did mine for quite a long time - like overnite and then some. Also, if the mixture looks too wet, feel free to add more nuts before pressing it into the pie plate.
Cinnamon - butternut squash eh? thats cool, i cant wait to hear how it turns out!

I'd say it turned out okay with the butternut squash now that I've tasted it but I am sure I'd prefer the sweet potatoes or pumpkin for their wonderful and unique flavors over the squash I used. But the sweetness was perfect, very good recipe! I'll post the picture in the pictures only thread when I download the camera! Thanks again for the recipes!

LOL. Fairygirl, I didn't dehydrate at all. I thought it was optional. Oh my, I am cracking up right now. Feel like the biggest ditz. If my dehydrater is not broken, I will look at trying it again.
