Don't you love all the beautiful food the approaching Holidays are bringing into our grocery stores? Persimmons, fresh nuts, pomagranates... Yum! Yum! We also brought back 2 pineapples; a rare treat for us.

Any suggestions about what to do with them?

in anything. I just made fruit leather out of pineapple, lemon zest, an orange, a little bit of banana. I think it was my favorite fruit leather yet.

My mum bought me 2 persimmons today! wow.
She bought a pineapple the other day.
I've discovered it makes a nice green smoothie with watercress. All the other watercress smoothies I've made have been nasty, but last week I tried watercress, spinach and rocket (I buy them in a bag together) with pineapple and it was delicious. Completely took away the sting. It's also the only green smoothie without banana that I've really loved.

Just slice and eat.

Cut up a few pieces and freeze for a tropical treat in Janurary.

I cut a pineapple in fifths radially and make smoothies, usually adding some other fruit. I include the core (which contains most of the bromelain) but not the rind, which I scrape with my teeth.

LOVE IT....So does my sixteen year old and all her friends. Hard to keep one on the shelf for long. Yesterday I juiced pineapple, orange and some coconut oil.. Great cause you can use the middle and save the softer stuff for just eating. Also a reminder of summer during these cold winter months. I close my eyes and I'm on the beach. I've also juiced pineapple, pear, and mango with some ginger....Yummy too. Here's to Florida in January.....Yehaaaaa :cool:

I just read a very simple recipe in 80/10/10

butter lettuce topped with a dressing of 4 oz. of pineaplle blended with 4 oz. of red bell pepper pour over lettuce and top with 1 oz. of chopped almonds

Thanks...Sounds delicious! Will try it in smoothies and that pineapple -pear- mango-ginger juice sounds awesome! Although I only have frozen pears and mangos... I guess I could thaw them first and then juice them!

Mmmmm... Gonna try that 80/10/10 salad too!

I just love to slice up the pineapple and put it in a tupperware container and eat it by itself over the week. Sometimes I put some in smooties and the pomogranite I like to juice in my juicer and put some in my green tea.

Nuts are just great to make a trail mix out of. I have never had a persimmon so I don't know what to do with that (is it a fruit?)

I love pineapple in a smoothie, one of my favorites and it always compliments the other fruits.

Also, I make zucchini pizzas. Thinly slice the zucchini lengthwise, put a marinara sauce on it, nacho cheeze sauce, top with pineapple, mushrooms, onions, olives, what ever you'd like. Warm it up for a few hours in the dehydrator, this is one of my most favorite main dishes but it has to have the pineapple to bring the flavors all together!

My pineapple favorites...

Juice: lots of cranberries, an orange or two, & a pineapple

OR...

Carrot Cake Salad

• one pineapple, peeled, cored & chopped into smallish pieces
• couple or three carrots finely grated
• handful of chopped walnuts (soaked & dehydrated if you so desire)
• handful of raisins /dried currants/ dried cranberries/dried cherries (u pick!)
• big drizzle of honey
• generous sprinkle of cinnamon

Mix it all together & serve. Don't make it too far in advance because it gets too watery. Enjoy!

Slice the pineapple in half, scoop out the pineapple. Fill it with Christmas balls and gaudy flowers. Strap it on your head. Put on a long wildly colored dress with a cinched waist and poofy sleeves.....and tango around the house with your husband singing lively spanish songs.

Persimmons are one of my favorite fruits... So subtle and sweet... They sorta look like tomatoes but are a nice deep orange color when fully ripe. I've only ever seen them at Xmas time. Mmmmmmm...DE-lish! You just gotta try them! Oh yeah, if you'd like to see what the flesh looks like, take a peek at the Recipe Photo Only thread...I recently posted a fabulous dessert Don made the other day: persimmons topped with banana ice cream and mac-date cream. Yum Yum!

For the pineapple, my favorite is cut it, freeze it (though you could leave it fresh). Then make this smoothie:

1 large Frozen banana
pineapple
zest and juice of 1 lemon
the seeds of 1 vanilla bean (I'm not raw so I use pure vanilla extract)
fresh ginger to taste
some agave necter, honey or stevia is you'd like.

Just blend it all together. The best smoothie ever! You can also add some spinach, if you'd like. And in the summer I like to add some peaches

Carmella, I lived on This Gazpacho last winter. I'm from the North as well-so I added somed cayenne to keep me warm & it worked.

When I make it-I juice up the centers of the pineapple.

Garnished with macs is the key-probably could use cashews but I haven't tried.
