I saw somone mention jellies and jams but can't find a thread with recipes for either. Does anyone have a link or a good recipe? Thanks!!

An easy way to prepare some "jam" is to simply blend the desired fruit in the blender, add some agave or honey and there you go. Maybe add a soaked date for thickness.

I love plum jam: dried plums, soaked overnight and then blended until smooth but still a bit chunky. Delish!

Berry Pineapple Jam
Yield: 3 cups

10 dried pineapple rings
4 c. frozen berries

Place pineapple rings in bottom of container. Cover with berries. Allow to sit until berries are thawed and pineapple is soft. Blend until smooth. This is delicious!


Date Butter

Soak 1 cup dates in 3/4 cup water or juice (pineapple is yumm!). When soft, blend until smooth.


Apricot Butter

1 1/2 c. pineapple juice or water
1 c. dates
1 c. dried apricots
1-3 t. lemon juice

Soak fruit in juice until soft. Blend until smooth.

I would perfer mine chunky as well. How do you get that consistacy without making it like babyfood? :rolleyes:

Oooo....those recipes sound great! I'll try them right away. I love pineapple but I'm thinking I'll add a piece of hot pepper to make a sweet/spicy jam!
