What is the drying time for strawberry/ banana and strawberry fruit leathers?
My book says 6 hours at 135; but I know that is wrong. My temp is at 107 but what is the timing?

It's going to vary...climate, etc. plays a factor in drying times so you kinda just have to start drying stuff and then determine what the drying times are most commonly going to be for you. Sometimes it just takes simple trial and error.
Now having said that, here in Olympia, WA...my fruit leather drying time is usually about 8 hours but sometimes this varies depending on what fruits are in it, if I spread it a little thicker or thinner than the last time. So, I'd say to go for 4 hours and then from there, start checking it every so often (I guess every couple of hours or so)...or, just dry overnight and check on it in the morning and feel for wet spots. Once there are no more wet spots and you can kinda peel the edge without it apparently becoming a mess, it's done. If not, let it go longer until you can.
