View Full Version : Coconut Banana Ice Cream?

My mom bought some extra bananas so we have plenty of ripe bananas, and I am sick and therefore afraid they will go bad before I can eat them all, if I don't act now she'll make a SAD banana bread no doubt. :(. SO I was thinking...what if I made raw banana ice cream sundaes for everyone tonight? They're all against eating raw and healthy but they don't have to know. We also have a mature coconut because I asked my mom for one so I could drink the water and restore some electrolytes after the virus I had. She was mad that I asked her but she got one.
Here is what I was thinking...
Blend some shreds of the mature coconut meat into a creamy texture (I've never done this before, does it work?)
next blend that in with ripe bananas and a tiny tiny bit of water.
freeze this.
Make some of RP's brownies (I was going to make some for gifts any way).
Once the coco-banana blend is frozen and I am ready to serve I will blend it again to ice cream consistancy...top it with some brownie crumbles and maybe drizzle some dark agave over the top?
Does that sound like it would work?
thanks everyone, I am not good at making recipes and rarely do so I just wanted to make sure this was possible and would be good.

OK- I have never been able to get those mature coconuts open -but if you can that would be great.
Freeze slices of the banana. Make RP's brownies & then top each brownie with a scoop of banana ice cream. You could even do the butter pecan trick by adding some nuts & vanilla & some agave to your ice cream. They will LOVE it !!!! :D :p :D
As far as the coconut-do you have any shredded in stock-if so-use that to top the brownie/ice cream sundae or even top the brownies with shredded coconut.

I duno. I want to try making a banana and pine apple ice cream. Very tropical. Think those flavours mix? :confused:

absolutely-but I would probably make the banana ice cream & then top with pineapple sauce-could even go all the way and make a chocolate sauce & strawberry sauce (top with nuts) voila..a banana split...Now we're talking YUM !!! :)

Ya gotta freeze the bananas well for ice cream to turn out. They will keep for a long time in the freezer if you want to do that, then make the ice cream whenever you fancy.

how does it become like ice cream? You just mush it and freeze it and hope it doesnt turn into an ice cube? :D

If you cut the banana into chunks, then freeze it and put it in the food processor or blender,you'll get an ice cream texture. If you don't serve it right away, you might have to put it back in before you serve it.

I break them in half - and freez them in bags.
Then when I'm ready for ice cream I send them through my juicer (with the blank) and it comes out just like ice cream!

My husband just bought me the Cuisanart ice cream maker for Christmas. I have been coveting it for some time now and it really is the macdaddy of all retail ice cream makers. Apparently you just plug it in and ...poof! ice cream:) I am dying to make chocolate ice cream with cashews, raw cocoa powder. agave nectar, a little maple syrup, etc. My husabnd has terrible asthma, allergies, pollups in his synuses, the whole nine yards and even considering a roto root job on his sinuses to cut out the pollups so I am trying super hard to eat raw and get the dairy, & sugar -(poison) out of our diets. This is all still pretty new to me and recently just tried my first young thai coconut. Wow! it was so yummy I sat with a half and a spoon until the shell was scraped clean - I wish they sold this pre-packaged. I also made chocolate pudding with coconut, cocoa powder, and agave nectar and we loved it! I hope my dream of chocolate ice cream becomes a reality soon after unwrapping my ice cream maker. I am worried something will go wrong with the consistancy and I will have yet another dissapointing raw recipe:( Is this raw food preparation just trial and error & keep on making it until you get it right kinda thing? cause sometimes I try a recipe and it flops.

I did a search on the web and found out how to open mature coconuts--you put the coconut in 2 of those plastic grocery bags and hit the bag against cement--it cracks it open. I love coconuts and have been buying the mature ones because the young ones in the store look really ''iffy'' so I started buying the mature ones. I add the meat to my smoothies in the morning and it fills me up. It's become my new favorite thing to eat. And when I did a search on the nutritional value of coconuts--wow they are really good for you.
