View Full Version : Why did my raw hummas taste bad?

Today I made a hummas paste to spread over head lettuce and topped with a bruchetta salad and it was horrid.

I used 2 cups of chickpeas (soaked over night)
I blended it in a blender with, 1 pinch of sea salt, 1 tbs of lemon juice and 1 small clove of garlic. The garlic and the lemon juice was the only good thing about it. The hummas was I duno how to describe it. It smelt very uncooked and it tasted very pastey and although I used water to help get it creamy it was nothing like cooked hummas. What did I do wrong?? :confused:

Unfortunately, sprouted beans and legumes don't taste anything like cooked...they have that "earthy" taste (at least to ME they do). I've heard quite a few people complain about raw chickpea hummus but I've also heard quite a few have success with making hummus from zucchini or cashews instead of using sprouted chickpeas.

I think there are a few recipes floating around here if you care to do a quick search for them.

Oh, so it was supposed to taste earthy LOL. Now I feel dumb :D
Hmm.. Too bad I can't use canned. Its cooked :(

I've seen this one


No Bean Humus

2 medium zucchini
1/4 cup olive oil
4-8 garlic cloves
2 t celtic salt (or use dulse flakes)
1/2 cup lemon or lime juice
3/4 cup sesame seeds
3/4 cup tahini
1/4 t cayenne
1 t paprika
1 t ground cumin

Process zucchini, olive oil and garlic first in food processor. Add remaining ingredients and process until smooth!! Yummy!

Its chick pea free. Maybe I'll try it! :D

I've heard that adding 1 tablespoon of tahini for each cup of chick peas is what makes it creamy. There was a recipe a while ago that had red bell pepper in it too. The person who posted it said it did not have the raw bean taste.

i've not been happy with the raw hummus made with chick peas...i've made two or three attempts; with and without tahini...little tails on the sprouted peas...i just don't want to waste food so next time i'll try another well recommended recipe.

I tried the raw chickpea hummus using Juliano's recipe. His contained what seemed like waaaaay too much parsley. I cut back on the amount of parsley by a lot but it still turned it an icky green and it tasted of parsley and had a very chalky mouth feel to it. Wasn't smooth at all.

You might try sprouting the chickpeas for longer then eating them as is. I like those, peas, and lentils sprouted and eaten plain like popcorn. They're kind of crunchy and starchy like popcorn. I have not found a recipe with them in it that I like though. Just like them plain.

I absolutely HATE raw chickpeas, they are horrible, but I do love hummus, so I use sunflower seeds instead of chickpeas, and they taste truly wonderful, please soak them first though. yummy!!!

I've never thought of using sunflower seeds instead....yum.
I've made the "No chickpea hummus" before...and I would recommend using less lemon juice to start with...and then taste it as you go! Let us know how it turns out!!

glad to know that I am not alone in my dislike for the chick pea hummus- I made it for a demo I was doing- and made the mistake of not trying it myself first- I was horrified by it- it tasted nothing like my favorite hummus- which until a few months ago I was eating on a weekly basis. Glad to see that there are some more options- I will try the one that trinity found with the zuchinni and also one with sunflower seeds. thanks for your ideas

I use this recipe and I love it:

1 zucchini
1/4 of an onion
tsp of sesame oil
1/2 cup of raw sesame seeds
few cloves of garlic
lots of lemon juice
squirt of Braggs ammino
1 teaspoon tahini or not
Throw in a bunch of sprouts too!

Blend it in Vitamix and yum

ok trinity... i just made your hummus and it is pretty much the best hummus ever! we are going to have it tonight with rawfoodchefs cracker-bread, pico de gallo and shredded lettuce.

Alissa's Zucchini hummus is the best. I cant tolerate the chick pea one's.

The first time I made hummous with raw chickpeas I thought it was nasty but it grew on me and now I love it. It's more earthy the longer you sprout them, so now I just soak them for 24hrs then use them (and eat them raw by the handful). But I do love the earthy sprouty hummus now too.

I also make it with any other bean sprouts and mixed bean sprouts (I buy bags of mixed mung, aduki, lentil and chickpea)

Well thats it! *throws in the towel* Ive been soaking chick peas for 4 nights, rinsing day and night and I woke up to my kitchen smelling like a fart. :eek:
I sniffed the bowl and almost gagged. No more chickpeas for me. ;)

I absolutely loove regular hummus....so ive tried a number of times to make sprouted chickpea version - however its always turned out horrible, not to mention the fact that it gives me the most horrendous gas :( ....and sprouting chickpeas too long makes them naasty.

now i make the zucchini hummus and im happy as a clam! i love it :)

LOL - trinity, thats kinda funny that your kitchen smelled like a fart! :D - i dont blame you either!

yes! peel the zucchini first unless u want a greenish hummus...and i think it gets creamier without the peel.
