Jicama Ceviche
Prepare early in the day to serve for dinner, or the day before to serve for lunch
Serves 8
2 large jicamas, peeled and chopped
1 cup each lime, lemon and orange juice
2 tsp salt
2 tsp pepper
2 cups tomatoes, chopped
2 cups onions, chopped
2 cups parsley, chopped
1 cup cilantro, chopped
½ cup Serrano chilies, chopped
1 Tbs. honey or agave nectar
1 rice avocado, diced
Place Jicama in large bowl. Sprinkle citrus juice over jicama and stir to combine. Let rest 2 hours to absorb juice. Stir in remaining ingredients, except avocado. Add avocado just before serving.

I don't think we get jicama in Australia...does it go by any other name? I'd never heard of it before I got Alissa's book...

Jicama is also called Yam Bean or Mexican Turnip. It's often found in asian supermarkets.

Thanks Caramba for asking the question - you don't get Jicama in the supermarkets in the UK either! And thanks Tanja for the answer - turns out my local chinese supermarket has them! Hee hee - Unfries here I come!

!!!!! I bought something that i THOUGHT was jicama.... it looks like a carrot but without the orange color. the question is.... WHAT IS IT??? :)
On the subject of this recipe: it is DELICIOUS and I made it with jerusalem artichokes, since obviously I didn't have any jicama. Better the 2nd day!!

Blue Sky, perhaps it was a daikon radish. They are shaped like carrots and are usually white.

If it's not a radish, it's probably a parsnip. Kind of like a carrot but not.
