:p But i decided to make some "Souped up Tomato Soup"
Here's what i used:
Took 3 to 4 nice sized tomatoes and cut them up, put them in the dehydrater for 1/2 hour along with a diced sweet potato.
Crack open a coconut and take the meat out and mix it with two cups of filtered water and blend up some coconut milk.
Put tomato and sweet potato mixture along with 1/2 avocado and blend up with a cup and a half of the milk, then you can warm it on low heat till it's to your liking.
You can add seasoning of your choice, it's tasty and filling and it satisfies that hunger that you get when it's cold outside. :D
Hope you enjoy it on cold days.

Bethanie, this sounds wonderful!! Did you use a young thai coconut, or the brown kind? I would love to make it, I used to love cream of tomato soup.

It is cold out. I was snowed in today. I dont like tomato soup but it does sound yummers! :D

:) This time i used the brown kind and it turned out yummy, the sweetness of the sweet potato and the creamy coconut milk is great for cold days.
If it weren't so late i could go for a bowl :D :D .
It's cold all this week so i don't have to hurry.

Thanks, sounds yummy! I've only opened a coconut 1 time...and it smelled bad so we threw it away. :o So if you don't mind....coconut meat is actually HARD...like the shredded kind you buy right? And about how much meat should you get out of a healthy coconut? Now I know it differs from coconut to coconut, but just a ballpark figure, for someone who is coconut challenged!! Thank you. I can't wait to make this recipe by the way!!
