Sorry I forgot that I had already posted the dressings below. So here is some desserts instead. Boy, I'll be glad when my memory improves.


Dena Banana Nut Brittle
2 1/2 cups pitted Dates
8 organic peeled Bananas
1/4 cup ground Flax Seed Meal
3 cups roughly chopped Almonds
3 cups organic dried Coconut
"Blend first three items until smooth. Stir in nuts and coconut. Evenly spread mixture on Telflex sheets and dehydrate at 105 degrees until crispy. Store in a sealed container in refrigerator or freezer for up to four months.

Raw Energy Balls
1 cup raw walnuts or pecans1 cup sprouted wheat berries (To sprout, soak 3/4 cup wheat berries in distilled water 24-hours)1 cup raisins4 tablespoons shredded coconut2 tablespoons apple juice or water Put nuts in food processor and pulse a few seconds. Add drained wheat berries, raisins and coconut. Process until a dough is formed, adding additional apple juice or water if necessary. If you desire a sweeter product, add extra raisins or dates. Refrigerate. When cold, roll spoonfuls into balls with your fingers and then roll in additional coconut. Refrigerate.

Date Pecan Squares
1 cup organic dates1/2 cup pecans1 teaspoon pure vanilla extract1 cup organic raisins2 cups dried unsweetened coconutIn a food processor, using "S" blade, grind pecans to a fine meal, add pitted dates and raisins. Process until a dough-like consistency is reached. By hand, work in 1/2 cup of the coconut. Sprinkle 3/4 cup coconut in a pan, place date-raisin-pecan mixture on top and spread to cover bottom layer. Top with remaining coconut. Cover and place in refrigerator. When chilled, cut into squares. (Note: this mixture can also be used as a pie crust if desired.)

I have been looking for a brittle for sometime and I just want to thank you for being an answer to my prayers. I am printing and I am making it tonight when I get home - wahoo.

Is this recipe in a book? Let me know

Most of the recipes that I've been collecting have come off the internet. I think that one came from the Hallelujuh Acres website. I'll get the address and post it for you. http://www.hacres.com/recipes.asp

Some of these recipes (at the hacres site) are not raw so you will have to search for the raw ones.

I am ashamed to say - I have the cookbook from HACRES and haven't really studied it. I have decided there is no excuse for me not to eat the right things with all the cook books I have.
